Lebkuchen (Gingerbread Cookies)

Today I am making Lebkuchen (Gingerbread Cookies)... one of my favorites during the holiday season.
INGREDIENTS:
500 g Rye Flour
120 g Butter
1.5 tsp. Baking Powder
120 g Powdered Sugar
250 g Honey
2 Eggs (+ 1 for egg wash)
2 Packets (64 Grams) of Lebkuchen Spices**
1 tsp. Cinnamon
50 g Ground Nuts
Mix butter and egg. Add honey and mix. Sift the dry ingredients together and add it slowly. Mix to form a smooth dough.Form a ball with the dough, wrap in plastic wrap or place in a glass container, and leave it to rest for an hour at room temperature.
Preheat oven to 350ºF/180ºC. Roll out dough to 1/2 inch thickness.
Cut out desired shapes and decorate as desired. Brush it lightly with egg wash. Bake for 12-15 minutes.
Eat the Lebkuchen as is, or dust with powdered sugar if desired.
Store cooled Lebkuchen in a sealed tin. You can add apple slices to the tin. This will help keep the Lebkuchen moist, and at the same time give them a nice aroma. (TIP: Don't have the apple slices directly touch the cookies. Place the slices in the tin, then place some baking paper (greaseproof paper), then place the Lebkuchen. Replace the apple slices with fresh slices, when necessary).
*If you can't get your hands on Lebkuchen spice packets, you can make your own mixture.
LEBKUCHEN SPICE MIX
INGREDIENTS:
14 cardamom pods
12 cloves
12 pimento seeds
2 star anise
2 tablespoon coriander seeds
2 tablespoon ground cinnamon
2 tablespoon ground mace
1 tablespoon ground nutmeg
2 tablespoon ground ginger
First remove the cardamom seeds from the green capsules. Put them in a pan alongside the cloves, pimento seeds, coriander seeds and star anise and roast them until they are fragrant. Grind them to a fine powder in a mortar. Combine with the remaining spices. Store in an air-tight glass jar until use.

Mint Chocolate Chip Cupcakes
Ingredients:
1/4 cup vegetable oil
4 eggs
1 teaspoon vanilla extract
2 tablespoons cocoa
1/2 cup Lakanto
2/3 cup almond flour
1/4 cup coconut flour
2 teaspoons baking powder
Mix all ingredients in a bowl and spoon 2 tablespoons into each cupcake liner. Bake 350 degrees for 15-20 minutes. Allow cupcakes to cool completely before frosting.
Mint Icing:
Ingredients
1 block cream cheese (softened)
1/4 cup butter (softened)
1//2 cup powdered Lakanto
1 teaspoon vanilla extract
2 teaspoons peppermint extract
green food coloring (optional)
Lakanto chocolate chips/cocoa (optional)
Mix all ingredients with a hand mixer. Put in a ziplock or piping bag and frost cupcakes. Add optional toppings and enjoy!
Keto Gingerbread Cookies:
Ingredients
3 cups almond flour
2 cups Lakanto
1 tablespoon molasses
2 tablespoons ground ginger
4 tablespoons ground cinnamon
1.5 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 tablespoon beef gelatin or xanthun gum
3 eggs
1 teaspoon vanilla extract
1/4 cup softened butter
Directions:
Beat the sugar, butter, molasses, vanilla, and eggs. Add all your spices, salt, and baking powder. Mix again. Add your sifted almond flour. Mix thoroughly. Flatten your dough on a sheet of parchment paper with another piece on top with a rolling pin. Set on a cookie sheet and allow to chill in the fridge for 30 minutes or longer. Cut your cookies and bake on 325 degrees for 12-15 minutes.
Royal Icing (optional)
Mix 1/4 cup powdered Lakanto and 1 tablespoon of heavy cream or water.

Using the amazing recipe and rolling pin from Tavola Mediterranea, I'm creating gingerbread cookies that have the Epic of Gilgamesh inscribe on them in their original cuneiform! The text comes from the Epic of Gilgamesh Yale Tablet and discusses Gilgamesh's decision to defeat the giant Humbaba.

These gingerbread tablets are SUPER DELICIOUS and the perfect ancient eat for something modern. The Epic of Gilgamesh is believed to be the oldest piece of literature in the world, and tells the story of Gilgamesh and Enkidu, two friends who go on many adventures. The epic is written in cuneiform, one of the oldest writing systems in the world. It was used for multiple languages in ancient Mesopotamia like Sumerian and Akkadian. Gingerbread of course was not a food consumed in ancient Mesopotamia, but even though it's not an ancient cuisine, we can say that cuneiform tablets were used a lot to document the ongoings of daily life in Mesopotamia.
