How To make German Pepper Cookies
1 Egg
1/2 c Granulated sugar
1 c All-purpose flour
pn Salt 1/2 ts Ground cinnamon
1/4 ts Ground white pepper
1/4 ts Mixed Spice
1 tb Cornstarch
1/2 ts Baking powder
1 Finely grated lemon peel
2 tb Chopped mixed candied peel
Powdered sugar (opt)
Whisk egg and granulated sugar until light and fluffy. Sift flour, salt, cinnamon, white pepper, Mixed Spice, cornstarch and baking powder into egg mixture. Add lemon peel and candied peel and stir well. Chill 1 hour. Preheat oven to 350'F. (175'C.). Lightly grease several baking sheets. Form mixture into 16 small balls and place well apart on baking sheets. Bake in preheated oven 20 minutes or until well risen and lightly golden. Cool on a wire rack. Sprinkle with powdered sugar, if desired. Store several days before serving to allow time for flavors to mellow.

This is Not Gingerbread I How to Make Pepper Cookies
Pepper cookies are a Christmas staple in my home country. But they are equally popular in other Baltic states and Scandinavia. Even though they look like gingerbread cookies – they are not. There is no ginger in this recipe. As the name suggests they contain pepper. The black pepper gives them a bit of a kick, but it is the other spices that really make this recipe come alive.
Heavy on cloves and cardamom which make them super fragrant. Cinnamon is also included and to tie it all together and give a slightly earthy flavour there is ground coriander. An unusual spice combination some may say, but that is what makes them unique, and it really works. Try it and you may just love it!

Jaggery Powder / Brown Sugar- 3 Tbsp
Ghee / Butter - 1 Tbsp
Flaxseed Powder - 1 Tbsp (OR) Egg - 1
All Purpose Flour - 1 Cup
Baking Soda - 1/4 Tsp
Salt - 1/2 Tsp

Christmas Pepper Cookies | Traditional German Recipe
These pepper cookies are served at Christmas everywhere in Germany.
They are unexpected delicious, surprising easy to make and the best Christmas cookies ever.
Ingredients
- 2 cups of white flour
- 1 teaspoon (3g) cinnamon
- 1/2 teaspoon (2g) ground nutmeg
- 1/2 teaspoon (2g) crushed cloves
- 1/4 teaspoon (2g) of salt
- 1/2 teaspoon (2g) sodium bicarbonate
- 1/2 teaspoon (2g) grated lemon peel
- 1/2 teaspoon (2g) ground anise
- 1/2 teaspoon (2g) ground black pepper
- 1/3 cup (50g) caster sugar
- 1/3 cup (110g) honey
- 1/3 cup (90g) molasses
- 1/4 cup (60g) melted butter
- 2 (120g) large eggs
- powdered sugar
Preparation
- heat the oven to 374 F (190 C)
- mix all the solid ingredients in a medium bowl
- in a large bowl, homogenize the liquid ingredients
- add the flour mixture and form a hard dough
- with the help of an ice cream scoop, balls the size of a walnut are made
- they are placed in trays at a distance of 5 cm
- bake for 12-15 min or until browned
- it is left in the trays until it slowly hardens
- sprinkle with powdered sugar
Recipe for 30-35 pieces
Store up 10 days

The history of paprenjak dates back to the Renaissance, and was mentioned by August Šenoa, a famous Croatian author, in his “Zlatarevo zlato.” Nowadays they are becoming more and more valuable and a Croatian symbol and one of the most popular souvenirs you can take home with you!
Ingredients :
3 cups flour sifted
4 oz. lard or butter
¾ cup caster sugar
3 tablespoons honey
1 whole egg
3 egg yolks
1 cup ground walnuts
½ teaspoon black pepper freshly ground
½ teaspoon ground clove
½ teaspoon cinnamon
½ teaspoon nutmeg freshly ground
1 pinch salt
1 lemon peel
You can also use all spice instead individual spices( all depends what you have in your pantries)
