These freshly baked soft buttery garlic knots will leave you asking for more.
GARLIC KNOTS
Ingredients
1½ tablespoons chopped garlic
1 teaspoon garlic powder
2 cups + 2 teaspoons refined flour (maida)
2 teaspoons milk powder
2 teaspoons fresh yeast
2 teaspoons castor sugar
½ teaspoon salt
2 tablespoons + 2 teaspoons butter + for brushing
½ cup grated parmesan cheese
1 teaspoon chopped fresh parsley
Oil for greasing
Milk for brushing
Method
1. Mix together flour and milk powder in a large mixing bowl. Add yeast, castor sugar and some water and let the yeast activate.
2. Add salt and sufficient water and knead into a soft dough. Add 2 tablespoons butter and knead again. Set aside to prove for 30-40 minutes.
3. Knock back the dough, divide into 8 equal portions and shape into balls.
4. Mix together parmesan cheese, garlic, garlic powder, parsley and 2 teaspoons butter in a bowl.
5. Roll out dough balls into medium sized thick discs, place a spoonful of cheese mixture in the centre, roll into cylinders and shape into knots.
6. Preheat oven to 180° C.
7. Grease a baking tray with some oil and place the prepared garlic knots on it. Set aside to prove for 10-15 minutes.
8. Brush the knots with some milk, put the tray in the preheated oven and bake for 15-20 minutes.
9. Brush with some butter and serve hot.

Garlic Knots | Small Batch | Makes 6
These garlic knots are full of buttery garlic flavor and the recipe makes the perfect amount for 2-4 people

Ingredients:
1 tsp dry active yeast
3/4 tsp sugar
1/2 cup warm water
1 1/2 cups flour
1/2 tsp salt
1/2 Tbsp olive oil
1/4 cup butter
pinch of salt
4 tsp garlic, fresh minced or 1 tsp garlic poder.
1/2 tsp Italian seasoning
2 Tbsp Parmesan Cheese, freshly grated is best
Preheat oven to 400 degrees F.
Combine yeast and sugar with 1/2 cup warm water. Cover and let sit for 5-10 minutes until it is foamy and proofed.
In a stand mixer or in a bowl by hand, combine flour, olive oil and yeast mixture. Knead until dough comes together and is soft and slightly tacky, about 5 minutes.
Place dough in a oiled bowl, cover and let rise until doubled. 30-60 minutes.
Punch down dough and place on a lightly flour.
Divide into 6 even pieces. Roll each piece into a log and then form into a knot. Tuck ends of knot underneath.
Place on a greased or parchment lined baking sheet, cover and let rise until double in size.
Mix together the butter/garlic mixture. In a small bowl combine melted butter, garlic and seasoning.
After the knots have doubled in size brush with half of the butter/garlic mixture.
Bake in oven for about 15 minutes or until golden brown.
Brush the garlic knots with the remaining butter mixture.
Serve warm and with marinara sauce for dipping.

450g bread flour
50g whole wheat flour
350g room temp water
10g salt
25g olive oil

GARLIC MIXTURE
1 head garlic, cloves separated and peeled
4 tablespoons unsalted butter
4 tablespoons olive oil
1 tablespoon finely chopped rosemary
1 teaspoon crushed red pepper flakes
1 teaspoon lemon zest
½ teaspoon garlic powder

CLASSIC GARLIC BREAD
HERBED GARLIC BUTTER
▪230g/2 sticks butter, grated
▪25g/8-10 cloves garlic, minced/pressed
▪25g or 1/2c parsley, rough chopped
▪1 sprig rosemary, leaves only
▪5-6 sprigs thyme, leaves only
▪3g or 2tsp dried oregano
▪3g or 1 1/3tsp black pepper
▪Pinch red chile flakes
▪3g or .5tsp salt
▪75g or 1/3c extra virgin olive oil
▪Coarsely grated parmesan
Add ingredients except parmesan to a food processor and process until well broken down and combined.
Slice a french roll in half lengthwise and place cut side up on a sheet tray (FRENCH ROLL RECIPE:
Spread a generous amount of the garlic butter on each piece. Sprinkle with ground parmesan. Bake at 475F/245C for 10-15min until edges are crispy.
Cut and garnish with an additional sprinkle ofl parm and olive oil

PULL APART PARMESAN GARLIC KNOTS
FRIED GARLIC BUTTER
▪50g/3Tbsp butter
▪15g or 1 1/4Tbsp olive oil
▪25g/8-10 cloves garlic, minced
▪3-4 sprigs thyme leaves
▪1 sprig rosemary leaves
▪20g or 1/3c parsley, chopped
▪3g or 2tsp dried oregano
▪Pinch chile flakes
Add ingredients to small sauce pot and heat over medium high. Stir and cook for 60-90 seconds until butter is melted and garlic is fragrant. Allow to cool for a few minutes before combining with garlic knot dough.
GARLIC KNOT DOUGH
▪180g 3/4c warm water
▪10g or 2.5tsp instant yeast
▪15g or 1.25tsp olive oil
▪5g or 1.25tsp sugar
▪280g or 2.75c bread flour
▪9g 1 1/3tsp salt
Add ingredients to a mixer with dough hook attachment. Mix on high for about 6min. Dough should be well combined and clearing the bowl. Cover dough and allow to sit at room temp for 60min.
Flip onto floured work surface and degas dough. Cut dough into 12 even pieces (no need to be exact). Roll, shape, and knot as shown in video @5:30. Place in a bowl and flour lightly to prevent sticking.
TO FINISH AND BAKE KNOTS
▪Coarsely grated parmesan
▪Garlic butter (whole cloves, crushed/cracked & cooked in butter over med-high for 60-90 seconds)
Add garlic butter to dough knots along with a handful of parm. Toss to combine. Place in a single layer in an oiled/sprayed 8”x8” (20x20cm) metal pan. Sprinkle top with parm. Cover and proof for 20-30min.
Bake at 450F/230C for 12-15mins until golden. Brush top with with garlic butter.
