How To make Gallo Pinto
1 c Raw brown rice (steamed)
5 cn (16 oz) black beans (rinsed
And drained) 1 Chopped onion
2 lg Green peppers, chopped or
Diced 2 lg Red peppers, chopped or
Diced 2 1/2 ts Ground coriander
4 tb Veg. Worcestershire sauce
2 tb Tobasco sauce
1 Scant Tbs. salt
2 pk Chopped, frozen spinach
(thawed and squeezed) Spray large casserole dish with something like Pam. (We used a LARGE, round Le Creuset dish.) Cook rice ahead (we used a steamer so that the rice wouldn't stick together). Saute peppers, onions, spinach, and seasonings. Add rice and mix. Add rinsed beans and mix. Heat through (covered). Enjoy. TYPICAL BREAKFAST from Nicaragua
THINGS YOU'LL NEED:
- Fresh white cheese
- 1/2 CUP cooked white rice
- 1/2 CUP cooked beans
- 1 ripe plantain
- 1/2 CUP water
- 1/2 CUP corn flour
- 2 eggs
- Salt
- Pepper
- 2 tbs tomato sauce
- 1/2 onion
- 1/2 green pepper
- 1 tomato
- 2 CUPS desired oil to fry
* Prep time 15 minutes
- T O R T I L L A S -
STEP 1
In bowl with flour add water little by little and knead.
STEP 2
Flatten the dough with your hands to make a tortilla.
STEP 3
Put tortilla on a griddle for about 3 minutes per side over low heat.
- S W E E T P L A N T A I N S -
STEP 4
Peel the ripe plantain and cut into slices.
STEP 5
Fry in oil for 3 minutes.
- R A N C H E R O S A U C E -
STEP 6
Dice the tomato, onion and green pepper.
STEP 7
Sauté vegetables.
Add salt & pepper.
Add tomato sauce.
Stir.
- G A L L O P I N T O -
STEP 8
Heat pan, add oil dice onion and peppers and sauté them.
STEP 9
Mix in beans.
STEP 10
Add rice to the pan, stir for 3 minutes.
STEP 11
Remove from heat and put into a bowl.
STEP 12
Fry eggs.
Serve

How to Cook Costa Rican Gallo Pinto | Costa Rica's Typical and Most Popular Breakfast (Updated)
After some years I think it is time to show an updated video on how I make Costa Rican Gallo Pinto, seeing as my methods have changed a bit and you guys seemed to love the first recipe so much that I wanted to share the adjustments with you!
I decided to test out two different ways of making it as well, based on genuine curiosity (let me know which way you prefer!)
I also expand a bit more on the complete typical breakfast here in Costa Rica, with a few options of what to pair it with. Enjoy!
To make about approx. 4 cups of Gallo Pinto:
2 Cups cooked rice, preferably chilled and day-old
1 Heaped cup of beans (black beans, pinto, or small reds are best)
1/4 cup of the bean liquid
2 TBSP. Lizano Salsa
1 tsp oregano
1 tsp dried thyme
1/2 tsp ground cumin
1 tsp salt
1/2 tsp of sugar if desired
1/2 cup of finely diced onion
1/4 cup finely diced sweet pepper
1/4 cup Cilantro (to taste, really)
