How To make Fruit Filled Cookies
1 c Shortening
(1/2 lard 1/2 butter 2 c Sugar
3 Eggs
1 c Thick sour cream
6 c Flour
1/4 ts Nutmeg
1/2 ts Salt
1 ts Baking powder
1/2 ts Baking soda
Filling: see directions 1. Cream shortening and sugar. Add unbeaten eggs, one at a time. Beat well
after each addition. 2. Add sour cream and flour sifted with nutmeg, salt, baking powder and
baking soda. 3. Chill in refrigerator overnight.
4. Roll. Cut with a 2-1/2-inch round cutter.
5. Place half of the cut cookies on greased cookie sheets.
6. Place a teaspoon of filling on each cookie.
FILLING: 1-1/2 c dates, 1 c seeded raisins, 3/4 c water 7. Put fruit through food chopper. Add water and cook until thick. Stir
to keep from scorching. Cool slightly. 8. Place another cookie over filling, and press edges to seal.
9. Bake at 375 about 12 to 15 minutes. 10. Makes about 3 dozen.

Ingredients:
1 stick of softened butter or 133 grams
1 cup of white granulated sugar
1 egg
3 to 4 drops of vanilla extract
1 1/2 cups of all purpose flour
1/2 tsp of baking powder
1/2 tsp or 1 pinch of salt
170 grams of fresh raspberries with 1 tbsp of flour folded in
Method:
Heat your oven to 350 degrees F or 180 C.
Add the butter and sugar to a mixing bowl. Using an electric mixer, beat until well combined and creamy.
Add in the egg and vanilla extract. Mix until combined.
Sift in the flour, baking powder, and salt. Mix until a dough forms.
Add the berries to the cookie dough mixture. Using a spatula, gently fold them in.
Scoop a large scoop of mixture in the palm of you hand and roll it into a ball.
Place them on a baking tray lined with parchment paper.
Place in the oven and bake them for about 19 or 20 minutes.
Remove from the oven and set them aside on a wire rack to cool.
Serve and enjoy your delicious raspberry cookies.

Recipe:
195 g all-purpose flour (1 cup + 1/4 cup + 1 tbsp)
120 g salted butter (1/2 cup)
80 g powdered sugar
2 yolks
lemon zest
Jam:
500 g fruit (17.6 oz)
2 tbsp honey
lemon zest (optional)
*For best results, I suggest using grams as a unit of measure.

Raspberry Kolacky Recipe || Only 5 Ingredients!

Raspberry-filled kolacky
Makes approx. 30 cookies
Ingredients:
3 oz. cream cheese, room temp.
1/2 cup (1 stick) of butter, room temp.
1 cup all-purpose flour
1/2 cup raspberry pastry filling- recommend the Solo brand cake and pastry filling (can substitute with other flavor fruit jams or fillings)
Powdered sugar for sprinkling
1. Mix together cream cheese and butter until smooth.
2. Gradually mix in flour, and form dough into a ball.
3. Chill dough for several hours or overnight in the refrigerator.
4. Roll out dough to 1/8 thickness, and cut out 2x2 squares.
5. Spread approx. 1/2 tsp raspberry filling into middle of pastry square, and fold the opposite corners over each other. Pinch and/or use a drop of water to seal.
6. Bake cookies in a preheated 350F (180C) oven for 10-15 minutes.
7. Allow to cool before dusting with powdered sugar.
8. Enjoy and treat yourself!
