2 c Butter or margarine;
-softened 1 c Powdered sugar; sifted
4 c All-purpose flour
1/4 ts Salt
2 ts Lemon extract
Filling Additional powdered sugar Filling: 1 Egg; beaten
2/3 c Sugar
2 tb Butter or margarine;
-softened 1 1/2 ts Grated lemon rind
3 tb Lemon juice
1 ts Cornstarch

Cream butter; gradually add 1 cup powdered sugar, beating well at medium speed of an electric mixer. Combine flour and salt; add to creamed mixture, beating well. Stir in lemon extract. Flour hands, and shape dough into two 16-inch rolls; wrap in wax paper, and chill several hours.
Unwrap rolls, and cut into 1/4-inch slices; place on ungreased cookie sheets. Bake at 400 degrees for 8 minutes or until browned. Cool on wire racks. Spoon filling on bottom side of half the cookies, spreading evenly. Place a second cookie on top of filling, top side up, and sprinkle FILLING Combine all ingredients in top of a double boiler, stirring until blended. Bring water to a boil. Reduce heat to low; cook, stirring constantly, until thickened and -----

THE BEST LEMON CURD FILLING THUMBPRINT COOKIES RECIPE. ONCE YOU TASTE THESE DELICIOUS COOKIES, YOU WILL GET ADDICTED TO THIS RICH FLAVOR.
For lemon curd filling:
1 egg
1 egg yolk
80 g of granulated sugar
Juice of 1 lemon
40 g of butter
1 tsp. of corn starch
- Cook at a low temperature with constant stirring, bring to a boil, boil for more 15 seconds.
Pour into a bowl, cover with stretch film and leave to cool completely.
For cookie dough:
180 g of softened butter
120 powdered sugar (I used fine sugar)
Juice of ½ of lemon
5 gr of vanilla sugar
5 gr of baking powder
1 pinch of salt
1 egg
320 g of all-purpose flour
Bake 20-25 minute at 180C degree.

Lemon Cookies
Ingredients:
1/2 Cup salted butter (softened to room temperature)
1/3 Cup powdered sugar
1 Teaspoon lemon zest
1 Cup all purpose flour
Directions:
Preheat oven to 350F/175C. Line cookie sheets with parchment paper (optional). In the bowl of a stand mixer, or in a large bowl if using a hand mixer cream butter until smooth. Add powdered sugar and mix on low for 2 minutes. Zest 1 large lemon, this should give you about a teaspoon of zest. Add this into your bowl and mix on low until incorporated. Add in the flour and mix on low until the dough comes together. Lightly flour your rolling surface, form the dough into a disc and lightly flour the top. Roll to 1/4 Inch thickness and cut cookies using a 3 inch cutter. Re roll and cut your scraps as needed. You should get 12 cookies. Place on prepared cookie sheets and bake 10-12 minutes or until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. Dip cooled cookies in lemon icing and allow 2 hours to set.
Lemon Icing
Ingredients:
2 Tablespoons fresh lemon juice
1 Cup powdered sugar
Directions:
Combine fresh lemon juice and powdered sugar in a small bowl. Whisk until smooth. If too thin, add a little bit more powdered sugar. If too thick, add a bit more lemon juice. Dip tops of cookies, let set and enjoy!

5. 밀가루(박력분)와 베이킹파우더를 체에 쳐서 넣고 골고루 섞어 주세요.
6. 비닐 랩을 씌워 냉장실에서 1시간 정도 굳혀 주세요.
레몬 커드 만들기
7. 달걀노른자에 설탕과 소금을 넣고 섞어 주세요.
8. 옥수수전분을 넣고 섞은 다음 우유와 레몬즙을 넣고 섞어 주세요.
9. 레몬 제스트(쿠키에 넣고 남은 제스트)를 넣고 섞어 주세요.
10. 약불에 올려 계속 저으면서 끓여 주세요.(약 10분 정도)
(달걀노른자를 충분히 가열해서 익혀야 비린 맛이 나지 않아요)
11. 불에서 내린 다음 버터를 넣고 녹이고 체에 걸러 비닐 랩을 덮고 실온에서 식혀 주세요.
12. 쿠키 반죽을 15g 정도씩 떼어 내 동그랗게 한 다음 슈가파우더를 충분히 묻혀 주세요.
13. 오븐 팬에 놓고 계량스푼을 이용해 쿠키 반죽의 중앙 부분을 꾹 눌러 주세요.
14. 165도 오븐에서 12분 정도 구워 주세요.(예열 185도)
15. 실온에서 식힌 레몬 커드를 잘 섞어 짤 주머니에 담아 주세요.
16. 쿠기를 오븐에서 꺼낸 뒤 바로 계량스푼으로 다시 한번 중앙 부분을 눌러 주세요.
17. 쿠키가 어느 정도 식으면 레몬 커드를 중앙에 짜 주세요.
