Super soft and gooey cookie dough, that’s loaded with chocolate chips! Stuffed with a thicc layer of Nutella ????

All you need is:
200g unsalted butter, softened
250g light brown sugar
1 large egg
1 tsp vanilla extract
320g plain flour
1/2 tsp bicarbonate of soda
200g chocolate chips + some for the top
350g Nutella
Bake 160C (fan) 25-30mins - allow to cool fully in the tin
Tin size: 8” springform pan

Raisin Filled Cookies -- German/PA Dutch Family Recipe
Mike's Mom and I make my great aunt's wonderful, soft, doughy PA Dutch/German raisin filled cookies, although you can use cherry or blueberry or other fruit fillings as you please! A wonderful treat!
RAISIN FILLED COOKIES
INGREDIENTS
1 cup packed brown sugar
1 cup sugar
1 cup butter, softened
3 large eggs
2 tablespoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground nutmeg or cinnamon (I used cinnamon)
1/2 teaspoon salt
3 tablespoons buttermilk
FILLING:
1 tablespoon cornstarch
3 tablespoons all-purpose flour
1 cup packed brown sugar
2 cups boiling water
1-1/2 cup seedless raisins
DIRECTIONS
In a large bowl, cream sugars and butter. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder, baking soda, salt and nutmeg; add to creamed mixture alternately with buttermilk. Cover and refrigerate until easy to handle.
For filling, in a saucepan, combine the cornstarch, flour and brown sugar. Stir in water until smooth. Add raisins. Bring to a boil over medium heat; cook and stir and cook for 3 minutes or until thickened. Cool.
On a floured surface, roll out dough into 1/8-in. thickness. Cut with floured 3-in.-round cookie cutters. Spoon 2 teaspoons filling on top of half the circles and top each with another circle. Pinch edges together and cut slit in top.
Place 2 in. apart on ungreased baking sheets.(I use parchment paper instead.) Bake at 350° for 10-13 minutes or until lightly browned. Remove to wire racks to cool. Yield: about 3-1/2 dozen.

Thumbprint Cookie Recipe!
1 Cup (225g) Unsalted Butter Softened to Room Temperature
1 1/4 Cup Sugar
2 Eggs (Room Temperature)
1 Tbsp Pure Vanilla Extract
1 Tsp Almond Extract (Optional)
3 1/2 Cups Plus 2 Tbsp of All Purpose Flour
1 Tsp of Baking Powder
1/2 Tsp Salt
Fill Cookies with your favorite Jam!
Powdered Sugar for Dusting
*Bake at 325 for about 15min
OVEN TEMPERATURES VARY SO USE THE BAKING TIME I GIVE AS A GUIDE!

Italian Cookies with Jam/ Pizzicati Cookies Recipe
This cookie melts in your mouth, with jam of your choice. Perfect for tea, coffee or any time.
Recipe:
• 3 sticks unsalted butter ( softened)
• 8 oz cream cheese ( softened)
• 1 cup sugar
• 1/4 tsp salt
• 2 eggs
• 1 tbsp baking powder
• lemon zest from the whole lemon
• lemon juice from the half lemon
• 5 flat cups all purpose flour, less or more, as needed
Knead the dough until it’s soft and not sticky
Wrap the dough in a plastic wrap and refrigerate for 20-30 minutes
Place the dough on a lightly floured surface and roll until the dough is approximately ⅛ thick. With a cookie cutter cut squares about 3”x3”, or you can cutout circles, using a tea cup
Place half a teaspoon of jam in the center of each square or circle
Bring the sides of the dough together as if to close square or circle, and pinch the ends gently but firmly together to secure them.
Place the cookies on a baking sheet covered with parchment paper. Bake them on 375f for about 17-20 minutes, depending on your oven.
Cookie should be very light brown
You make about 60 pieces cookie
Once completely cooled, sprinkle them with powdered sugar before serving.
Store the baked cookies in an airtight container or sealed jar. Keep them in a cool spot in your kitchen or in the fridge for up to 3-4 days. Longer they stay, more delicious they are ????
You can definitely freeze them in a ziplock bag up to two months
