Spinach. Superpowered sailor Popeye's go-to power-up. Every youngster's worst dinnertime nightmare. The leafy green stuff is divisive, to say the least. But, chock-full of various nutrients and versatile enough to compliment tons of different dishes, spinach can add a surprising touch to an entrée when done right!
Sadly, plenty of home cooks have suffered at the hands — or, should we say, stems — of wilted, soggy, watered-down spinach, so it's easy to see where the veggie gets its bad rap from. But a few simple tips, tricks, and extra steps can take your spinach from saturated and unsatisfying to scrumptious! The first step? Making sure to avoid these mistakes everyone makes when cooking spinach.

This is a video demonstration of how to cook fresh spinach with the easiest and most healthful method possible. The recipe is below.
Easiest Cooked Spinach Ever!
Fresh spinach (any amount)
Garlic powder, or other seasoning of choice
Salt, optional
One or two wedges of fresh lemon
Wash the spinach. This step is important, even if you’re using pre-washed spinach from the grocery store. Place the washed spinach in a colander and allow it to drain briefly. Do not dry it in a salad spinner or by blotting it with a towel. In this case, we want whatever water is clinging to the spinach leaves.
Place the washed spinach in a (clean, dry, unheated) pot with a lid. Do not add oil or additional liquid. Sprinkle seasonings of choice over the spinach and toss to combine. Place the lid on the pot and turn the burner to high heat. Do not walk away! As soon as you see steam coming out from under the lid, turn the burner off and allow the pot to stay on the burner for a few minutes until the steam stops and the spinach has had time to wilt.
At this point, the spinach is ready to serve or the pot can be removed from the heat and allowed to sit elsewhere with the lid on until you’re ready to serve the spinach.
Remove the spinach to a serving dish and drizzle with fresh lemon juice. Taste and adjust seasonings, if necessary. Enjoy!

Ingredients:
2 tablespoons Olive oil
1 Onion, chopped
2-3 cloves Garlic, crushed
600g Spinach
1/3 Oats/semolina/flour or Quinoa/rice/lentils (cooked)
1-2 tablespoons Flour of your choice
2 Eggs
Salt to taste
Pepper to taste
1 teaspoon Paprika
1 teaspoon Oregano
Green onion (optional)
Serve with yogurt
Directions:
1. In a large pan heat 2 tablespoons of olive oil, add chopped onion and cook for 5 minutes. Add garlic and cook for 1 minute.
2. Add spinach and cook until wilted, about 5-6 minutes.
3. Drain the liquids out of the spinach as much as possible. Transfer to a cutting board, roughly chop.
4. Transfer to a bowl, add eggs and mix well. Add spices, oats, flour and mix until combined.
5. Heat olive oil in a large pan, scoop 1-2 tablespoons of the mixture and cook for 3 minutes or until golden, flip and cook 3 minutes or until golden.
6. If you prefer to bake the patties: preheat oven to 350F (180C), scoop the 1-2 tablespoons of the batter on a baking tray lined with parchment paper and bake for about 15-20 minutes or until golden.
7. Serve with yogurt and salad.
