We're huddled up in our lakehouse in South Dakota for a couple weeks... what better to pass the time than do some baking? One of my favorites is focaccia. Super easy to make, and you can make it however you want! I chose garlic parmesan for this one, but the possibilities are endless!

Tomato garlic Parmesan Focaccia
They say its the most simplest bread to make but making bread is no simple task if the bread Gods are against you, I messed up this recipe many times this week before it came out this perfect. I hope the bread Gods are with you when you make it
The first mistake I made was pulling out my bread too fast resulting in undercooked bread.
The second mistake i made was adding too hot water and resulting the yeast would die, so when i say lukewarm water it means warm to touch.
For bread
450g all purpose flour
7g/ 1tbsp instant dry yeast
300ml/ 1 and 1/4cup lukewarm water
1tsp sugar
3tbsp olive oil
2 tomatoes
Parmesan cheese
For garlic topping
2tbsp water
2tbsp olive oil
1tsp minced garlic
Salt and pepper
Line a tray with parchment paper and grease it with some olive oil.
Bloom yeast by adding 1tbsp of yeast with 300ml lukewarm water and 1tsp sugar let it sit for 10mins or until it becomes frothy.
In a bowl sieve in your flour, add 1tsp salt and mix well, make a well in the centre and add your yeast water and 3tbsp olive oil.
I used a stand mixer for 10mins or until it pull apart from sides. Do the same with hand by sprinkling some flour on it to avoid for it to stick to your hands. Knead till smooth and bounces back once poked in.
Now transfer it in well oiled bowl, cover and rest in your microwave for 2 hours. After 2 hours, it would have doubled in its size, then punch in and knead for a few mins to make it smooth. Transfer it in the prepared tray, stretch the dough to cover as much of the tray, don't force it, if it doesn't happen wait for 15 mins and try again. Now cover and proof in microwave for 1 hour.
Slice your tomatoes in discs.Make your garlic topping by adding all the ingredients mentioned and whisk it well.
Preheat your oven at 230c, once the dough is proofed, create dimples in the focaccia by dipping your fingers in water, then laying your tomatoes and garlic topping and finally grating parmesan cheese on top. Bake at 230c for 25mins or until golden brown. As soon as its out of oven feed it some more olive oil.Rest in the tray for 10mins and then remove on a wire rack rest for 10mins more and Serve.

INGREDIENTS:
dough:
500 g bread flour (tipo 00 italian and 550 in germany)
1 pack instant yeast
1 tbsp. sugar
1 tsp. salt
1 tsp..italian allrounder
260 ml lukewarm water
5 tbsps. olive oil
toppings:
1 clove garlic
1 medium size onion
50 g olives
125 g diced ham
100 g parmesan cheese

How to make a Focaccia with tomato Italian herbs and Parmesan
This focaccia with tomato, Italian herbs and Parmesan cheese is a great side dish with your next BBQ, at your buffet or cocktail party. The bread is airy and topped with tomatoes, herbs and cheese. The crispy outside of the bread with the airy inside and the delicious topping with sweet tomatoes, salty cheese and Italian flavors is really a must try!

✅Ingredients
Focaccia
- 4 cups flour
- 2 teaspoons yeast instant
- 1 tablespoon salt
- 1 teaspoon sugar
- 1 1/4 cup lukewarm water approximately 37 degrees
- 2 tablespoons olive oil
Topping
2 tomato roma tomatoes are delicious
2 tablespoons Italian herbs such as thyme, rosemary, oregano
1 clove garlic squeezed
3 tablespoons olive oil extra vierge
1 oz. Parmesan cheese
✅ Instructions
Preparation
1. Put the yeast together with the sugar and the water in a small bowl and mix well. Let stand for 5 minutes.
2. Place a baking paper on the baking sheet.
3. Wash the tomatoes and cut into thin slices (¼ inch, 0.5 cm thick) and season with salt and pepper. Finely chop the Italian herbs and garlic for the topping and mix them with the olive oil .
Focaccia
1. Put the flour in the bowl and add the yeast mixture and the olive oil.
Knead with the mixer for 5 minutes and then sprinkle the salt on it. Mix another 10 minutes until the dough is smooth. Grease a bowl with some oil and put the dough in it. Turn the dough once and first cover the bowl with a slightly damp tea towel over which you put plastic foil. Place the bowl in a warm place and let the dough rise for an hour.
2. Preheat the oven to 430 degrees Fahrenheit (220 degrees Celsius).
3. Press the air out of the dough. Place the dough on a baking sheet and press it into the desired shape (about ½ inch / 1.5 cm thick).
Topping
1. Push with your fingers holes in the Focaccia (not completely through the dough, just enough until you get a slight bowl).
2. Spread the tomato slices on top of the Focaccia. Sprinkle the bread with the herbal oil.
3. Bake the bread for 10 minutes in the oven, remove it and sprinkle with the Parmesan cheese. Then bake for another 5 to 10 minutes until the Focaccia is golden brown.
