Easy Focaccia Bread pt. 1

⭐️ Focaccia bread is so easy! All you need is flour, water, salt, and yeast for the dough, and rosemary and olive oil as toppings. You can make it on the day or get ahead and let it proof slowly in the fridge.
⭐️ Ingredients
For the dough
3½ cups flour all-purpose flour or half all-purpose and half whole wheat flour
1½ cups + 1 tablespoon lukewarm water
1 teaspoon yeast instant dry yeast or active dry yeast. 10 grams if you use fresh yeast.
1 teaspoon sugar
2 teaspoons salt

Spring Garden Focaccia or should I call it edible canvas?! It was so fun to make.
RECIPE:
400 g all-purpose flour (3 cups)
350 ml warm water (1 cup + 1/2 cup)
3 g dry yeast (1 tsp)
8 g sugar (2 tsp)
10 g salt (2 tsp)
30 ml olive oil (2 tbsp)
Toppings:
- Rosemary
- Asparagus
- Cherry tomatoes
- Sage
- Spring Onions
- Purple onion
- Kale
- Mushroom

Garden Focaccia Bread
When I first saw a garden focaccia my first thought was, wow! So Cool. Then immediately after, “Ain’t nobody got time for that.” Now, thanks to that little Pandemic, I have time on my hands! And I DO have time for that!
This is a very simple focaccia that is based on Nick Malgieri’s recipe in the book How to Bake. I followed his recipe except I always like to swap a little AP flour for whole wheat. I feel like it justifies all the excessive baking and makes it healthy. Ok. Not exactly healthy, but healthier.
Garden Focaccia Recipe
1 ⅓ c warm tap water
2 ½ tsp active dry yeast
6 tbsp olive oil (divided)
2 ¼ c AP flour
1 c whole wheat flour
2 tsp salt
1 tsp kosher or coarse salt
Measure water into a small bowl and whisk in the yeast and 3 tbsp of the oil. Add the flours and 2 tsp salt into a large bowl and stir well. Pour in the water mixture and stir until the flour is evenly moistened and then beat vigorously for a minute.
Cover with plastic wrap and let rise for 1 hour until doubled. Spread 1 ½ tbsp oil in a 10x15 inch sheet pan. Scrape the risen dough onto the sheet pan and spread with your fingers. If the dough bounces back, let it rest a few minutes and try again.
Now decorate with your flowers. I used red and orange pepper, quartered and seeded cherry tomatoes, red onion and basil to decorate. Chives or Scallions would also make some pretty neat flower stems.
Cover with a piece of plastic wrap that is lightly coated in olive oil and let rise for 1 hour until doubled.
Preheat oven to 450 and set a rack in the lower third of the oven. Sprinkle the top with the 1 tsp coarse or kosher salt and drizzle with the remaining olive oil.
Bake for about 25 minutes, until golden brown. With a spatula, check the bottom about halfway through to make sure it isn’t browning too much. If it is, slide the pan into another pan to insulate the bottom.
Slide onto a rack to cool or a cutting board if serving immediately.

Italian Focaccia | Homemade Garden Focaccia bread recipe 意大利福卡恰麵包 家庭自製花園拼圖麵包
★ Starter | 酵母麵團
Warm water | 溫水 85ml 2/3 cup
Dried active yeast | 幹酵母 12g 1 tbsp
Honey | 蜂蜜 12g 1 tbsp
Bread Flour | 高筋面粉 64g 1/2 cup
Set in warm place 20-30 mins

Warm water | 溫水 260ml 1 3/4 cup
Olive oil | 橄欖油 60g 5 tbsp
Bread Flour | 高筋麵粉 255g 2 cups
All purpose flour | 中筋麵粉 380g 3 cups
Sea salt | 海鹽 1 tbsp
Olive oil on the bottom rise for 1-2 hours (warm place)

Flatten the dough and rise for 1-2 hours

FOCACCIA ART: Classic focaccia bread turned into edible artwork
This Focaccia Art is both beautiful and delicious, and it gives you an excuse to play with your food! This video shows you how to make edible artwork and encourages you to get creative using what you already have. Recipe below:
Focaccia Art
2 1/2 cups warm water
2 tsp. dry active yeast
2 1/2 tsp. honey
5 1/3 cup all purpose flour
2 Tbsp. kosher salt
1/4 cup extra virgin olive oil, plus more for greasing pan
- Put 2 1/2 cups warm water in medium size bowl, add dry yeast and stir, then add honey and continue stirring until dissolved. Set aside.
- In separate bowl, mix together flour and kosher salt. Pour yeast water into flour mixture and form dough. Add 1/4 cup extra virgin olive oil and continue to knead dough. Cover and let rise in warm place 1-2 hours (1st rise)
- Once dough has doubled in size, place it onto a well-greased cookie sheet or pan. (Use approximately 2-3 Tbsp. olive oil to grease pan. Gently stretch dough to fill pan. Don't worry if it doesn't all the way to the edges.
- Cover with saran wrap and place in refrigerator overnight for second rise.
Next Day
- Take focaccia dough out of refrigerator and let stand for half an hour, until it comes to room temperature. Then dip fingertips in olive oil or water and dimple the dough with fingertips, being careful not to poke holes through the dough.
- Drizzle more olive oil on top and brush to cover entire surface. Sprinkle a little kosher salt to taste. At this point you can bake as-is, or add your favorite toppings such as rosemary & garlic. You can get creative and paint a picture with vegetables and herbs. If you do so, brush them with olive oil to keep them from burning in the oven.
- Bake at 450º for approximately 20 minutes, or until golden brown.
