How To make Flame Toasted Whole Wheat Tortillas

-Butter (optional) Flavored Oil -or- Melted Keywords: Breads, Vegetarian, Vegan, Lacto, Southwest If you haven't tried flame-toasted wheat tortillas you're in for a treat. Like toast they can be topped in endless ways. Place a tortilla directly over a medium high gas flame, or place on a cookie rack set over an electric burner. Toast until surface becomes lightly flecked with char, about 10 to 20 seconds, and tortilla begins to fill with steam. Turn over and toast the other side. A perfect tortilla will fill with steam and puff up if it has no tears or holes. If desired, brush tortilla with oil or butter. Place in a towel-lined basket while toasting the remaining pieces. Hi friends,welcome to madhu samayal
Mexican Recipe -Tortillas
Tortilla is staple food in Mexico
Tortilla is Flatbread.Vary in sizes
Traditionally Tortillas are prepared with corn or maida
flour .But today i am using whole wheat flour(Healthier version)
Homemade tortillas are healthy and soft too
I am sharing a vegetarian version(No Lard is
used which is pig fat)
Today we can see Tortilla without lard or baking powder
But yet very soft Tortilla
3cups of whole wheat flour
salt as needed
mix well
olive oil 3tbs
this fat helps tortilla to be soft
you can store tortillas in fridge or freezer too
i will share how to store in fridge at the end of video
mix well .It should get crumbly texture
very important step
when you hold and press it ,you should get shape
and it should break into powders when broken
hot boiling water to knead dough
use wooden spatula and mix well
add little by little water and knead carefully
without adding more water else it turns sticky
still some dry flour when you touch it.so adding some water
touch and feel the consistency before adding further water
at each stage
no dry flour when touched and can form shapes too
close it till it gets luke warm to handle it in hands
knead well and form dough
soft dough is formed .Add little drops of olive oil
let it sit for 15mins
Always store the cooked tortillas wrapped well in cotton cloth
and then keep in hot box .This helps to retain softness and not soggy
after 15mins,knead well and divide into equal balls
you can do tortilla as your desired sizes.I am making small
sized tortilla
dust wheat flour to prevent stickiness
spread as round not so thick or so thin
To make exact equal round ,you can even use moulds to cut
or tiffin box lid to cut as round shape effortlessly
repeat the process with the rest of the dough
cook both sides in high to medium flame without adding oil
dont cook in low flame .It turns hard.Flip often to
prevent from turning hard
wipe off the flour before you cook next tortillas each time
to prevent burning of leftover flour in tawa
stack each cooked tortillas in cloth
Soft tortillas ready
many recipes are prepared with this tortillas or you can
simply eat this with gravy
store this tortillas in zip lock bags by keeping parchment
paper in between each tortillas.Keep in fridge for 10 to 20 days
or in freezer for 6months.Anyways have it fresh for healthy

Whole Wheat Tortilla (Roti)
Soft whole wheat tortillas made with 3 simple ingredients! Packed with wholesome goodness and no yeast, no baking powder or soda. Use them to make wraps, soft tacos or enjoy with your favorite curry or soup!
Ingredients:
(makes 6 to 8 tortillas/rotis)
White whole wheat flour 1.5 cups
Hot Water 1 cup + 2 Tbsp (depends on the quality of your flour)
Pink salt 1 tsp or less according to taste
Directions:
Knead a soft pliable dough using and incorporating hot water little at a time.
Allow the dough to rest covered for at least 15 minutes.
After resting, knead it using the palm of your hand. Push it away and pull it over itself about a dozen times (about 2 minutes).
Dust it with flour and make a log about 12 to 14 inches long. Now cut the log into 6 to 8 dough portions.
Lightly roll each dough portion in flour and make a smooth ball. Set them aside.
Start heating a pan on the stove top.
Take one floured dough portion and start rolling it into a circle on your work surface with the help of a rolling pin. Ensure even thickness all around. Use as little dry flour as possible to help you roll and shed off excess flour before placing the rolled tortilla on the pan.
Once the pan is hot (not smoking hot) place the rolled tortilla on the hot pan.
Let it cook till the surface facing up looks dry. Then flip.
After 20 to 30 seconds lift with the tongs and check. If you see small brown spots then lift it off the pan and place the side facing up on the flame first (this will help puff it up easily). Keep moving it on the flame with the tongs.Once it puffs up, flip and get it evenly cooked on all sides.
(If cooking on the pan and not the flame then after the second flip use a broad flat spoon to apply gentle pressure from all the sides to help it puff up. Flip and cook evenly from all sides).
Place the cooked tortillas wrapped in a clean kitchen towel.
