1 Pound White Fish 4 Ounces Instant Potato Flakes Sauce: 1 Ounce Cooking Fat 1 Ounce Plain Flower 1/4 Pint Milk 1/2 Teaspoon Salt 1/4 Teaspoon Pepper 2 Eggs -- Hard-boiled & Chopped 1 Tablespoon Parsley -- Chopped Poach the fish in salted water for approx. 10 minutes until tender. Drain well and reserve a quarter pinto of the fish stock for the sauce. To make the sauce melt the fat and add the flour. Cook for one minute without browning. Gradually add the milk, fish stock, salt and pepper. Bring to the boil, stirring all the time, until the mixture thickens. Then add the chopped eggs and parsley. Flake the fish. Add to the sauce, and place in an ovenproof dish. Make up mashed potato as directed on the packet and either pipe for fork over the fish mixture. Bake for 25 to 30 minutes in a moderate oven 350 F, gas mark 4. Serve hot, accompanied by additional parsley sauce if desired.

Ingredients for the Fish Pie: 2 1/2 lbs (1 kg) floury potatoes - such as maris piper, peeled and chopped into large chunks 3 tbsp butter 3 tbsp double heavy cream) large pinch of salt and pepper 2 1/2 cups (600ml) full fat milk 2 boneless salmon fillets 1-2 boneless cod or haddock fillet 15 king prawns shrimp these can be cooked or raw (make sure they're de-veined) 2 tbsp plain/all-purpose flour OR 2 tbsp cornflour mixed with 2 tbsp cold water for gluten free 1 1/2 cups (150g) packed grated mature cheddar cheese
To serve: 1 tbsp chopped chives Peas Sweetcorn

FISH PIE:
*500g all purpose flour (4 cups) *15g salt (2 teaspoon) *230g butter 2 sticks *1/2 cup plus 2 tablespoon cold water(about 125ml)
* 1 large Mackerel(cut up) * 1/2 teaspoon salt * 1 teaspoon garlic powder * 1 teaspoon all purpose seasoning * 1/2 cup water * 2 tablespoons oil of choice * 1/2 medium Onion * 2 scotch bonnets. * 1/2 teaspoon each: salt, garlic powder, chicken seasoning. * Egg wash.

My secret for a beautiful fish pie is to use a combination of smoked and raw fish - it makes the most incredible broth for the white sauce!
Fish and Shrimp Pie! The best meal you will eat all week!
When you’re after comfort food, it’s hard to pass on a good fish pie. It’s also perfect for dinner parties, simply place the elegant dish in the centre of the table and let the guests help themselves. Pair that with a beautiful white wine, and you’re golden.
You can use any fish you like, I think a combination of white fish and salmon works best. Make sure you buy the freshest fish you can. Don’t use frozen, it will fall apart. Stay away from dry fish, like tuna or swordfish. In this recipe I also added shrimp for an extra layer of flavour.
You can add more to this recipe if you like, such as mushrooms, braised leek, dill, cheese on the topping, etc. I like to keep things simple, there’s more than enough flavours to satisfy your tastebuds without overpowering the delicate fish flavours.
If you have leftovers, simply leave in the fridge so it sets, then cut into portion squares, wrap them up in cling film and freeze. So easy! To use, simply remove from freezer and leave in fridge overnight. Reheat in the oven for that crispy topping. A microwave certainly works if you’re in a hurry, but I don’t recommend it.
Serve with a beautiful crisp salad and pair with a crisp dry white wine. Enjoy fish pie today (With shrimp!)
