How To make Fish En Escabeche
1 lb Firm White Fish Fillets; *
1/3 c Lemon Juice
1/3 c Lime Juice
1/4 c Olive Or Vegetable Oil
1 tb Cilantro; Fresh, Snipped, **
1 ts Oregano; Fresh, Snipped, ***
3/4 ts Salt
1/4 ts Pepper
12 ea Stuffed Green Olives; ****
2 ea Jalapenos Chiles; *****
1/4 c Onion; Finely Chopped, 1 sm
1 ea Clove Garlic; Finely Chopped
1 c Tomato; Seeded & Chopped
1 ea Avocado, Peeled & Chopped
* Fish should be Orange Roughy, Haddock, or Mackerel, cut into 1/2" cubes. **If fresh Cilantro is not available, use 1 tsp dried cilantro leaves. ***If fresh oregano is not availabel, use 1/4 tsp dried oregano leaves. ****Olives should have pimiento stuffing. *****Jalapeno Chiles should be seeded and chopped. ~------------------------------------------------------------------------- Heat 3/4-inch of water to boiling in 10-inch skillet; carefully place fish in water. Heat to boiling; reduce heat. Simmer, uncovered, just until fish is opaque, about 30 seconds (DO NOT overcook or fish will fall apart); drain carefully. Mix remaining ingredients except tomato and avocado in a glass or plastic dish. Stir in fish carefully. Cover and refrigerate 2 day, carefully stirring occasionally. Just before serving, gently stir in tomato and avocado; drain. Serve fish mixture on saltine crackers or tortilla chips, if desired.

Ingredients:
500 grams fish, cleaned
Cooking oil needed to fry the fish.
2-4 tbsp. cooking oil
1 red onion medium size, sliced
4 cloves garlic, chopped
1 thumb size ginger, strips
1 small size carrot, strips
1 red bell pepper, strips
1 green bell pepper, strips
3 tbsp. soy sauce
4 tbsp. vinegar
3 tbsp. sugar
1 cup water
1 tsp. salt
1/2 tsp. ground black pepper
1 tbsp. cornstarch with 2 tbsp. water

This is how to make super easy and yummy fish fillet escabeche
INGREDIENTS
-1Kilo cream dory fish fillet (frozen then thawed)
-1 and 1/2Tbsp fish sauce
-ground black pepper
-1Cup flour
-1/2cup cornstarch
-about 1Cup water
-oil for frying
-1pc carrot sliced into strips
-1pc red bell pepper sliced into strips
-1pc large onion sliced
-1cup water
-1/2cup light brown sugar
-1/2cup vinegar
-1/4cup ketchup (banana/tomato)
-1/4tsp salt and ground black pepper
-1Tbsp oyster sauce
-1-2Tbsp slurry (1part cornstarch dissovled in 1part water)

Ingredients:
1. Pompano Marinade
500 grams - Pompano
1/4 tsp - salt
1/4 tsp - pepper powder
1 tsp - cornstarch
2. Frying
1/4 cup - canola oil
***marinated Pompano
3. Thickening Sauce
1/2 cup - water
1 tsp cornstarch
4. Stir Fries
3 tbsp - same used oil
1/2 cup - carrots
1/2 cup - bell peppers
1/2 cup - onions
5. Escabeche Sauce
* left over same oil
3 cloves - garlic
3 pcs - spicy chilis
2 tbsp - vinegar
1/4 cup - banana or tomato catsup
1/4 tsp - pepper powder
1 tsp - sugar
1/2 tsp - chicken powder
2 tsp - liquid seasoning
***fried veggies
***thickening sauce
Cooking time: approximately 25 minutes
