How to Make Chili Oil Sauce | Fireside Kitchen
This is a fantastic fridge piece to have around! Honestly, this homemade hot chili oil recipe is one for the books. Next video we'll be making a few dishes with this stuff...

Combine:
--1T Coriander Seeds, 2T Black Peppercorn (or 3T Sichuan Peppercorn), toasted and pulverized
--0.5 C Chili Flakes
--2T Sugar
--2t Salt
--Pinch o' 5 Spice
In a wok / small heavy-bottomed pot / saucepan:
--Low heat 1/4 C Neutral Oil
--Brown (~3 min) 2T Red Onion, 2 Garlic Cloves and 2t Ginger, small diced (smaller cuts = more toasty flavor)
--Add 3/4 C Neutral Oil, 3 Star Anise Pods, 1 Bay Leaf, 1 Cinnamon Stick and SLOWEST & LOWEST simmer for ~1.5 hours then reduce heat before...
--Add 1/4 C Sesame Oil, 1t MSG (optional), and 2T Soy Sauce (Careful! Wok comes in useful here to avoid splatter -- temper in from sides above hot oil's surface)
--Stir & cook for 4 minutes, oil should be hot but not simmering anymore
--Sieve the HOT oil mixture into chili flake mixture & mix, let cool
--Best flavor infusion is after a couple nights in the fridge. Enjoy!

2 tbsp citrus herb seasoning
1 tsp salt

1 tomato diced
1 jalapeño
2 pimento peppers
1 small red onion
1 half ripe mango diced
1/2 tsp salt
1 tbsp chopped cilantro
1/4 tsp salt
1 tbsp sweet chilli sauce
.......
1 cup cooked parboiled rice
2 tsp Avocado oil
1/2 tsp ap seasoning
1 tsp tex mex seasoning
1 tsp pimento flakes
1 tsp annatto / roucou
1 tbsp cilantro chopped
........

1 tsp salt
1 tsp smoked paprika
1 tsp chilli powder
2 tsp pimento flakes
2 tsp tex mex seasoning
1 tsp all purpose seasoning
1 tsp cumin

1 medium onion chopped
1/2 cup celery
2 scallions chopped
1 tbsp minced garlic
3 cups eggplant chopped
1 can chili black beans

Ranch Fire Crackers
Move over bland. No plain crackers here. We're serving up crunchy, zesty bursts of flavor with Hidden Valley Ranch's Ranch Fire Crackers. All you need are five ingredients to transform these crackers from drab to fab and dip ready.
〈Ranch Fire Crackers Recipe〉
What You'll Need:
✓ 1 ½ cups olive oil
✓ 4 tbsp Hidden Valley Original Ranch Seasoning & Salad Dressing Mix Shaker
✓ 3 tablespoons red pepper flakes
✓ 1 teaspoon black pepper
✓ 1 pound saltine crackers
Directions:
⁃ Pour the olive oil, seasoning mix, red and black peppers into a gallon-size Glad® Zipper bag. Seal the bag and thoroughly mix the ingredients together until well blended.
⁃ Place all of the crackers into the bag, re-seal, and gently turn the bag over several times to coat the crackers with the spice mixture. Be sure to coat as thoroughly as possible.
⁃ Let the bag sit at room temperature overnight.
⁃ When ready to bake, preheat oven to 250°F. Lay the crackers on a baking sheet. Bake for 15 minutes, to seal in the spices and dry slightly. Store in an airtight container.
