How To make Finnish Curd Cake
CRUST:
2 tb Butter; * 2/3 c Bread Crumbs; Dry **
CAKE:
1 1/2 ts Baking Powder 1 c Unbleached Flour; Sifted
1 c Cottage Cheese 2 ea Eggs; Large
1/2 c Brown Sugar 1 ts Cinnamon; Ground
1 ts Cardamom; Ground 1/2 ts Ginger; Ground
1 ts Orange Rind; Grated 1 ts Lemon Rind; Grated
1/2 c Butter, Melted, *
* Use Sweet Cream Butter In this recipe. ** Note: This recipe can vary depending on the type of pan you use. ~ Butter the baking dish, pie pan, or springform pan until generously coated. Sprinkle the crumbs as needed into the pan, then turn the pan around and shake gently, distributing the crumbs along the sides as well. The crumbs should completely coat the inside of the pan. Chill briefly to set the crumbs and then fill with the desired filling. CAKE: Preheat the oven to 325 degrees F. Sift together the flour and baking powder and set aside.
Press the cottage cheese through a sieve. In a large mixing bowl, beat the eggs and the sugar until they are frothy. Add the spices and fruit rinds. Add the cottage cheese and blend all the ingredients well. Stir in the butter, then add the dry mixture, mixing well. Pour the mixture into the prepared crust and bake for 1 hour. NOTE: Again this is more like a quick bread, and you can increase the sugar if you like as this is not particularly sweet. :

Scandinavian Summer Strawberry Cake - Jordgubbstårta ( Sweet & Addictive)
This is an amazing midsummer or well.. summer cake that is often enjoyed here in Scandinavian (Finland-Sweden) . It is quite an easy cake to make, essentially a sponge cake and decorated by whipped cream and fresh strawberries. Here’s an easy strawberry cake recipe to try at home :)

Summer Strawberry Cake - Jordgubbstårta : Serving 6-8
Cake:
150 gm melted butter/Margarine (2/3 cup)
3 eggs
400 gm plain flour ( 3 1/4 cups)
150 gm sugar (3/4 cup)
2 teaspoon baking powder
2 teaspoon Vanilla Sugar/Extract
200 gm Turkish Yogurt (1 cup)
100 gm fresh strawberries ( 1/2 cup)
Vanilla Cream:
200 gm whipping cream (1 cup)
2 teaspoon vanilla extract/Sugar
2 tablespoon sugar
250 gm sliced strawberries (1 1/2 cup)
Method:
Start making the sponge cake for the Swedish Jordgubbstårta. Grease and flour(or line) a round tin with removable edges (about 24 cm in diameter) .
Add eggs & melted butter and whisk for 1 min. Set aside. All all dry ingredients in a bowl and mix well. Add in the wet to the dry ingredients and combine well. Heat Oven 175 C/347F. Add in the turkish yogurt and combine well. Add the fresh strawberries and mix well.
Pour the batter into the cake tin and bake in the middle of the oven for about 35-40 minutes or until the cake is set. Allow the cake to cool completely, loosen the tin sides and cover the cake with plastic or a kitchen towel. Don´t be afraid that the cake will be dry, It's even better if you bake this the day before.
For the vanilla cream, in a big bowl add in cream, sugar, vanilla sugar/extract and beat for 1-2 mins until form soft peaks. Once the cake is completely cooled, add a big dollop of cream and spread it evenly. Lastly, add on the sliced strawberries & Serve :)
