Big Fat Greek Filo Parcels | Akis Petretzikis & Nia Vardalos - AD

I could have just eaten them all and not shared! You all know Im a sucker for a good pastry and this one was delicious. It can be served with a side dish or a salad or just eaten on it’s own.
I love the introduction of broccoli in the mixture. For those who turn their nose up to this yummy vegetable, I can guarantee that you will want more of it if cooked in this little parcel.
Broccoli comes from the cabbage family, its high in fibre & iron, contains antioxidants and contributes to reducing inflammation. If you have an under-active thyroid you may have been told to avoid cruciferous vegetables and broccoli falls under this list. Speak to your doctor for medical advice.

RECIPE
Makes 6
6 sheets of filo pastry
4 tablespoons of melted butter
‘
Filling
120g broccoli florets , cut into bite size
130g cottage cheese
2 tablespoons parmesan cheese
1 tablespoon dijon mustard
250g cooked bbq chicken, shredded or cut into bite size
Boil, steam or microwave broccoli. For this recipe I added the florets in a microwaveable dish, added two tablespoons of water, covered and microwaved for 6mins on high. Be careful when removing, it will be very hot. Check if cooked through as it may need a further minute or two. Darin the water and set to the side.
Pre-heat the oven 180C
Mix the dijon mustard and cottage cheese in a deep bowl. Add the parmesan cheese , broccoli & chicken and mix well.
Take a piece of filo pastry and lay it flat. Brush with melted butter and fold in half.
Place two tablespoons of mixture in the the centre of each pastry and gather up the corners, twist lightly and press firmly into the centre. Twist again. Repeat with each filo pastry.
Place each parcel on a lined flat tray, brush with melted butter and bake for 20mins or until golden.

Ingredients
2 pounds #4 phyllo pastry, at room temperature
1 pound or 3 bunches baby spinach, chopped
2 bunches of fresh dill, finely chopped, or 2 teaspoons dried dill
6 scallions, thinly sliced
15 ounces ricotta cheese, full fat, and at room temperature
1 pound feta cheese, crumbled
4 eggs, beaten and at room temperature
1 pound butter, melted
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper to taste
Instructions
Preheat your oven to 375 °F, 190 °C.
Line 2 half-sheet baking pans with parchment paper.
Make the filling:
Combine the feta cheese, ricotta, eggs, oil, salt, pepper, and dill in a tabletop mixer fitted with the paddle attachment. Beat until combined.
Add the scallions and beat until combined.
While the mixer is running on low add a handful of chopped spinach at a time until all of the spinach is incorporated.
Mix everything together with a spatula and set it aside
Assemble the triangles:
While the phyllo is still rolled in its packaging, cut it into three equal portions. Unwrap one portion and leave the rest in their packaging so that they do not dry out.
Work with two layers of phyllo at a time and drizzle some melted butter between the two layers and on top.
Place a tablespoon of spanakopita filling at the bottom of the strip and roll it up, flag style. See video.
Place the triangles on the baking trays and continue assembling them until the filling and/or phyllo runs out.
Brush the tops of the triangles that you will be baking with melted butter and sprinkle with some salt.
Bake them for about 40 minutes or until nice and golden. Serve with tzatziki or as is.
Notes
Sometimes the phyllo sticks together. You don't have to be precise and fight with it to stick to the 2 layers of phyllo rule. I promise, if you roll it up with 3 layers or even 4, it will taste just as good or maybe better.
Freezer Instructions: Remove the plastic wrap and brush the pies with melted butter or oil and then sprinkle the tops with salt. Cover loosely with foil and bake at 375 °F for 40 minutes. Remove foil and bake uncovered until golden and crisp. About 15 minutes.

Phyllo dough triangles with spinach and feta: to try at any cost!
INGREDIENTS
1 egg
125ml (1/2 cup) milk
125ml (3/5 cup) vegetable oil
2 tbsp of water
1 tsp salt
feta spinach
salt & pepper
3 rolls of phyllo dough
poppy seeds
1 yolk egg
METHOD
Mix egg, milk, oil, water, and salt in a bowl.
Layout a sheet of filo pastry and pour a little of the mixture, spread over the entire sheet. Repeat twice, getting a total of 3 layers.
Mix feta cheese and cooked spinach and pour over the filo pastry. Roll from one end to the other to obtain a strip.
Cut into triangles and place on a baking tray.
Brush each triangle with egg yolk.
Sprinkle with poppy seeds and bake at 180ºC (356°F) for 15 minutes.
