Ingredients
Makes about 6-8 hand pies
1 puff pastry sheet (14 oz – 400g)
Caramelized Onion
2 medium onions ,sliced
1 tbsp (14g) butter
1 tbsp (14g) olive oil
1 tsp (5g) sugar
salt
Mushroom Filling
1 pound (500g) mushrooms ,sliced
2-3 cloves garlic
fresh thyme
1 tbsp (15ml) soy sauce
Salt and freshly ground black pepper
1 cup (100g) cheddar or gruyere cheese ,grated
For Topping
1 egg , beaten
Parmesan cheese ,grated

Filo Pastry Pie Recipe | Good Housekeeping UK
Watch our step-by-step filo pastry pie recipe to find out how to work with filo pastry and delicious spinach and ricotta pastry pie.
1. To make a filo pie, carefully unroll filo pastry. Take one sheet of pastry and brush generously all over with some melted butter.
2. Gently press filo, butter side down, into a loose bottom cake tin. The pastry needs to sit over sides.
3. Brush butter over another sheet of pastry and put in tin, at 90° to first sheet. Repeat so that there are 3 or 4 layers in tin. Spoon in filling.
4. Pull sides into middle, scrunched up so that pastry has some texture. It’s okay if filo doesn’t cover filling - butter some more sheets of filo and press over top of pie, enough to well cover any gaps, so that filling isn’t showing.
5. Put tin on a baking sheet and brush top with a little more melted butter. Cook at 180°C (160°C fan) mark 4 according to recipe, until pastry is crisp and golden brown.

When you first taste this leek and mushroom pie, you will want to know which restaurant I stole it from. This recipe is all about spectacular flavour combinations and a light pastry option. Leeks sweated and dressed with full cream and a pinch of salt. Mushrooms and garlic sauteed and dressed in thick beef stock. These 2 with parmesan cheese and fresh basil in filo pastry, join them perfectly. Do try this filo comfort food. So let's get cooking.............
Ingredients for : Leek And Mushroom Pie : Filo Comfort Food
1/2 of a large leek
40 grams of salted butter
125ml of full cream
400 grams of washed button mushrooms sliced
15 grams of salted butter
4 large cloves of garlic
125ml beef flavoured stock ( 1 Oxo Beef Flavoured cube and 120mls hot water)
8 large sheets of filo pastry ( vegan friendly )
1/4 cup of olive oil for brushing filo pastry
Medium sized baking dish ( serves 2 - 3 people )
Extra butter for greasing baking dish
Fresh sourdough sliced with avocado and ground black pepper
