How To make Fig Breakfast Waffles
3/4 c California dried figs
2 c Sifted cake flour
2 tb Double-acting baking powder
1/2 ts Salt
2 tb Sugar
1 ts Grated lemon rind
3 Egg yolks
1 1/2 c Milk
7 tb Butter or shortening; melted
3 Egg whites; stiffly beaten
Allow figs to stand in boiling water for 10 minutes, then clip off stems and blossom ends with scissors, and snip into small pieces. Reserve some for use in syrup. Sift flour, measure, then re-sift into mixing bowl with remaining dry ingredients. Add lemon rind and finely cut figs. Combine well-beaten egg yolks with milk and melted shortening. Mix lightly into dry ingredients, then fold in stiffly beaten egg whites. Bake on hot waffle iron until golden brown. Serve with lots of butter and warm maple syrup to which cut figs have been added. INGREDIENTS
200g oats
200g kefir
2 bananas
1 teaspoon of baking soda
4 eggs
Blend everything in the food processor.
Make pancakes or waffles.
Serving suggestions
Peanut butter (or another nut butter) and berries
Ricotta, honey and pecans
Ricotta or goat cheese and figs
Homemade hazelnut-chocolate spread
Maple syrop

* To make this oil-free I subbed 4 tbsp tahini for the oil and used 1 tbsp less water!
CHOCOLATE WAFFLES (could also be pancakes!)
1 tbsp Ground Flax + 2 tbsp water
1/2 cup Plant Milk
1/2 tsp Apple Cider Vinegar
1/2 cup Oats, ground into flour
1 heaping tbsp cocoa / cacao / carob powder
2 tsp Cacao Nibs or Chocolate Chips
1/2 tsp Baking Powder
1 tbsp Sweetener of choice
1 tsp Vanilla Extract
Pinch of Salt
1. Add the ACV to the Plant Milk in a small bowl to create a buttermilk. Let sit ~10 minutes
2. Make your flax egg in another small bowl
3. In a third bowl (yay, dishes!) combine all dry ingredients and stir well
4. Add the Flax Egg, Sweetener, Vanilla, and Buttermilk to the dry ingredients and mix until combined
5. Pour into a waffle maker and bake on low heat until it stops steaming (will depend on the maker, about 3-7 min). If you bake on low heat, you don't need to use oil!
6. Top with whatever floats ya boat

BETH'S SPICED PUMPKIN WAFFLES
Makes 12 waffles
INGREDIENTS:
1 ¾ cup (210g) flour
1 tbsp(7g) baking powder
½ tsp (2.5ml) baking soda
1 tbsp (7g) pumpkin pie spice*
3 tbsp (38g) sugar
½ tsp (2.5ml) salt
1 cup (240ml) milk
7 tbsp (105 ml) melted butter
1 egg
1 tbsp (15ml) vanilla
1 cup (240ml) canned pumpkin (pure pumpkin puree)
¾ cup (180 ml) club soda or sparkling water
¼ cup chopped pecans (for garnish)

Homemade Whipped Cream
1 cups heavy whipping cream
1 tbsp powdered sugar
½ tsp vanilla
METHOD:
In a large bowl whisk together the flour, baking powder, baking soda, pumpkin pie spice, sugar and salt. Then add milk, melted butter, egg, vanilla, pumpkin puree and club soda. Mix to combine.
Lightly grease waffle iron with melted butter. Once iron is hot, ladle just a small amount of batter so that it doesn’t fill the well, this will give you nice irregular edges (like the picture). Once done, pile 3 waffles to a plate, top with a dollop of whipped cream and chopped pecans.
For Whipped Cream: Place all ingredients in the bowl of an electric mixer and whip until soft peaks form.
