8 oz Can Tomato Sauce
1/2 c Orange juice
1/2 c Finely chopped Onion
2 tb Raisins
2 tb Chopped Pimento
1/2 ts Oregano, crushed
1/2 ts Chili powder
1 x Clove Garlic, minced
12 oz Chicken Breast Halves *
2 ts Cornstarch
1 tb Water
1/4 c Snipped Parsley
3 c Hot cooked Rice
Several dashes bottled Hot Pepper Sauce * 12 oz boned skinless chicken breast halves, cut into 1" pieces In a large skillet combine tomato sauce, orange juice, onion, raisins, pimiento, oregano, chili pwder, garlic, and hot pepper sauce. Bring to boiling; reduce heat. Cover and simmer 5 minutes. Stir in chicken; return to boiling. Cover and simmer 12-15 minutes more or till chicken is tender and no longer pink. Meanwhile combine cornstarch and water. Stir into skillet. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Toss parsley with rice. Serve chicken mixture over rice. ****************************************************************** Per serving: 248 calories, 21 g protein, 35 g carbohydrates, 2 g fat, 49 mg cholesterol, 277 mg sodium, 430 mg potassium.

Crockpot Chicken Tinga - An Essential Mexican Recipe
???????? 3-Step Chicken Tinga Recipe ????????
1️⃣ Plop the following ingredients into a Crock-Pot / slow-cooker:
• ~2lbs skinless chicken thigh (consider bone-in!)
• 2-5 canned chipotle peppers
• 1-14.5-ounce can of fire-roasted tomatoes
• 3 garlic cloves
• 1 chopped onion
• 3 tsp kosher salt
• black pepper
• 1 tsp cumin
• 1 tsp Mexican oregano
• extra optional spices
○ chili powder
○ a whole bay leaf
○ smoked paprika
2️ Let it braise on low for ~6 hours or high for ~3 hours
(If using an instant pot, you can cook this under pressure for as little as 15 minutes! And if you've got one of the really fancy ones, you can even sear the chicken and onions in the pot before braising)
3️ Remove the chicken to cool. Set the Crock Pot to high. Use an immersion blender to turn the braising liquid into a smooth sauce. Shred the chicken with your hands and return it to the bubbling sauce. Serve chicken as part of nachos, tacos, tostadas, quesadillas, or enchiladas.

Chicken Breasts
Ranch Seasoning Mix
Chicken Broth
Taco Seasoning
Black Beans
Rotel
Corn
Cream Cheese
Limes
⭐️ How to make fiesta chicken in the crock pot
Add the chicken and place all the ingredients except the cream cheese and limes in the crock pot. We drain and rinse the black beans before adding to the crock pot.
Cover and cook on high in the slow cooker for 3-4 hours or low for 6 hours.
Shred the chicken.
Squeeze the limes over the chicken mixture, add cream cheese and stir to combine.
Continue to cook in the crock pot until the cream cheese is fully melted (usually 30-60 minutes).
Serve over rice or with tortillas.

One Pan Fiesta Chicken & Rice -
Ingredients:
Chicken Seasoning -
2 tablespoons fiesta spice mix - recipe at
1 tablespoon olive oil
1 lime, juice
Meal -
5 or 6 chicken thighs (bone in and boneless both work great!)
1 tablespoon olive oil
1 cup onion, chopped (1 small onion)
1 cup green bell pepper, chopped (1 bell pepper)
4 cloves garlic, minced
1 cup rice, long grain
1 cup chicken stock
1 cup tomatoes, chopped
1 cup corn
1 cup pinto beans - recipe at
2 tablespoons fiesta spice mix
Instructions:
Chicken Seasoning -
Mix together the fiesta spice mix, olive oil and lime juice
Meal -
Preheat oven to 350 degrees F
Rub the prepared chicken seasoning all over the chicken thighs
Heat a cast iron skillet or oven safe pan over medium high heat
Add olive oil to skillet
Place the chicken into the hot skillet, skin side down, and sear for about 2 minutes until brown
Turn the chicken over and cook another 1 - 2 minutes
Remove the chicken from the skillet and set aside
Add the onions, bell pepper and garlic to the skillet and saute until fragrant
Stir the rice into the onion mixture
Add the chicken stock, tomatoes, corn, beans and the fiesta spice mix
Stir to combine and bring to a simmer
Place the chicken on top of the rice mixture
Cover and move to the oven to bake for 25 minutes
Remove the lid and continue to bake another 15 - 20 minutes, or until chicken and rice are done
