6 Nests fideo (angel hair
Pasta) 12 oz Jar picante sauce (mild or
Medium) 1 c Julienned nopalitos (cactus)
OR 12 oz jar pickled cactus Drained and rinsed OR (in a Pinch) 2 julienned and Blanched bell peppers 1 cn Pinto, poquito, anasazi,
Pink or other beans of your Choice 1 sm Can (4 oz?) diced green
Chiles cook the pasta according to package directions. blanch cactus, if using fresh. drain beans and green chiles. toss all ingredients together. this dish is best at room temperature, although it is good hot or cold also. Fideos
Ingredients:
15 oz. package fideos (or angel hair pasta broken into small pieces)
1-tablespoon canola, or olive oil
1-tablespoon tomato paste
One 8 oz. can of tomato sauce
½-teaspoon salt
¼-teaspoon pepper
2 cups water
Directions:
Heat oil in a medium sauté pan, add fideos and cook for about 2 minutes, until noodles begin to turn slightly brown. Add tomato paste, and mix until fully combined. Next add tomato sauce, water and bring to a boil. Add salt, pepper, and garlic powder. Let boil for 1 minute, and then turn the heat to simmer, cook until the noodles have softened and all the liquid has been absorbed. Some people like their noodles a little “soupier,” so adjust them to your liking. Add more water if you want them with more liquid, or less if you want them with a thicker consistency.

Sopa de Fideo (Mexican Noodle Soup)
Sopa de fideo or classic Mexican noodle soup is authentically vegan and you're going to love it!
All Mexicans grow up eating this soup. It's really no wonder Mexican moms love serving it to their children, because it's quick and easy to prepare -- not to mention, quite an inexpensive meal.
Ingredient you'll need
3 Roma tomatoes
1/2 cup chopped white onion
2 whole garlic cloves
3/4 cup of water
3 Tablespoons of olive oil or vegetable oil
one 7.05 oz pack of fideo
5 cups of vegetable broth
2 sprigs of cilantro, optional
salt to taste (in total I used about 1 teaspoon -- keep in mind the saltiness of the broth you use)
Topping Options
Vegan: pickled jalapeños, avocado, vegan cream & lime juice
Vegetarian: any of the above but use regular crema fresca instead of vegan, and also crumbled queso fresco or cotija.
