Zucchini Noodle Chicken Alfredo
Here is what you'll need!
Serves 3
Ingredients
3 zucchini, ends trimmed
2 tablespoons butter
2 chicken breasts, thinly sliced
1 teaspoon Kosher salt
1 teaspoon freshly ground black pepper
3 cloves garlic, minced
¾ cup cream
1 cup shredded parmesan cheese
2 tablespoons finely chopped parsley
Preparation
1. Using a spiralizer, spiralize the zucchini into thin noodles. Microwave the noodles for two minutes, then drain any liquid.
2. Melt the butter in a pan over medium heat. Cook the chicken, salt, pepper, and garlic until garlic is starting to brown and chicken is cooked. Add the heavy cream, parmesan, and parsley, stirring until evenly combined. Bring to a boil, then stir until the sauce has reduced by about half. Remove from heat.
3. Toss the zucchini noodles in with the chicken mixture, and stir until the noodles are coated evenly. Serve with more parmesan, if desired!

Recipe: Fettuccine with Zucchini, Squash and Pecans
Ingredients:
1/2 cup Food Club coarsely chopped pecans 12-oz
Food Club package fettuccine
2 tablespoons butter
2 tablespoons olive oil
2 medium zucchini, shredded
1 medium squash, shredded
1/2 cup grape tomatoes, sliced in half
1 Tbls garlic cloves, minced
1 cup aged Parmesan Cheese
2 Tbls dried basil
* salt
* freshly ground black pepper
Preparation:
1. Prepare fettuccine according to package directions.
2. Heat pecans in a small skillet over medium-low heat, frequently stirring, 5 to 6 minutes.
3. Melt butter with olive oil in a large skillet over medium-high heat; add zucchini, squash and garlic, and sauté 3 to 4 minutes. Toss with cooked fettuccine, pecans, cheese, tomatoes, salt, pepper, and basil.

Fettuccine with zucchini and ricotta
Good Day my Foodies!
This recipe is easy to make as it is delicious. My regular zucchini pasta recipe, I slice the zucchini and fry them in olive oil. This time I wanted to avoid frying the zucchini and so I decided to cooked them with the fettuccine. The zucchini only needs 4 minutes to cook, any longer the zucchini will be mush. I had extra ricotta left from anther recipe and I decided to add it to give the sauce a creamier taste. The taste was out of this world.
