6 Eggs, separated 6 ts Sugar 2 c Thin cream 2 c Flour 1 t Baking powder 1/2 ts Cinnamon or cardamom More flour 2 lb Lard or cooking oil Beat egg yolks with sugar until thick and yellow. Add cream, and flour mixed with baking powder and cinnamon or cardamom. Fold in the stiffly beaten egg whites and add more flour, enough to make a pliable dough. Follow directions for preceding Fattigmann. Makes about 84 fattigmann.

This i how I make and cook the norwegian christmascake fattigmann: The rare Norwegian Christmascake Fattigmann Recipe: 6 yolk of an egg 60g sugar 4 big spoonful cream 1/4 dl cognac 250g wheat-flour lard for cooking Whip the Yolks till light yellow, then add sugar an whip till light stiffen. Whip the cream and add. Add the cognac an at last sift in the flour. Don`t work too much. The dough should be very sticky. Let stand cold over night. Next day roll the dough thin cut out and form the cakes, place on a board covered whith flour before cooking. Store in a box, cold and dry.

It's not Christmas (Jul) without both making and eating the traditional Klejner. These tasty cookies have been passed down for many generations in our family. My Danish mom learned how to make Klejner homemade from watching her Danish mother, who learned how to make the Christmas cookie from watching her Danish mother etc. As you can see our family has enjoyed Klejner for many years. Depending how busy you are klejner can be made the same day or over a 2 day period. * 1st day prepare the dough * 2nd day shape and fry the klejner Klejner are best served when slightly warm and eaten the same day.
♥Danish Christmas Klejner Recipe Ingredients♥ •4 cups flour •1 tsp baking powder •2 cups sugar •2 1/4 cup softened butter (or margarine) •4 eggs •1 1/2 cups of milk •1 lemon (the grind from the lemon peel) •1 tsp cardamon Vegetable or peanut oil for deep-frying •A pot for the deep frying •A dinner fork or frying scoop •A mixer with a paddle (if you don’t have a mixer then mix by hand) •A knife or pizza cutter •Wax or parchment paper To make the shape of a klejner * 1st fold the longer end of the diamond strip into itself a little bit. * 2nd bend the end towards the slitted hole in the diamond shaped cookie * 3rd insert the end into the hole. * 4th pull all the way through the slit to make a twist.
