How To make Famous Hot Brown
1/3 Cup Plus 1 tablespoon butter
Divided 1 Medium Onion
chopped
1/3 Cup Flour
3 Cups Milk :
heated
1 Teaspoon Salt
1/2 Teaspoon Crushed red pepper
4 Ounces To 6 ounces American Cheese
2 Eggs well beaten
1 Tablespoon Butter (additional)
8 Strips bacon
8 Slices Wheat bread :
toasted
2 Chicken breasts -- cooked
Sliced Parmesan Cheese Paprika
Melt 1/3 cup butter in saucepan and add onion. Cook until transparent. Add flour and blend until smooth. Add milk, salt, and red pepper. Stir and cook until mixture is thick and smooth. Stir in cheese, eggs, and 1 tablespoon butter. Continue to cook, stirring until mixture almost reaches boiling. Remove sauce from heat. Fry bacon slices until crisp.To Assemble hot browns: 1. Toast 8 slices of wheat bread. 2. Cut 4 in half diagonally. 3. On 4 oven proof plates, place cut toast with points turned outward, with one whole slice in the middle. Then layer chicken, sauce, and bacon. 4.Sprinkle generously with Parmesan and paprika. 5.Broil 2 to 3 minutes. More than special - a Kentucky tradition. Hint: Turkey may be substituted for chicken. The Hot Brown is a true Kentucky original, and the recipe for this ultimate in warm, satisfying comfort food is featured on menus across the world. What goes into the making of Kentucky's signature dish? We visit the kitchen of Louisville's Brown Hotel, where this classic originated more than 80 years ago.
Here's the back story of the Hot Brown: In the 1920s the Brown Hotel was the site of popular dinner dances, attended by upwards of a thousand guests each evening. In the early morning hours, after a night of dancing, the guests would head to the hotel's restaurant for a meal. Chef Fred Schmidt set out to create a new dish to tempt their taste buds. He came up with an open-faced turkey sandwich with bacon, tomatoes, and a Mornay sauce, the one and only Hot Brown.
Generations of cooks have taken the original recipe and added their own twist. We meet with Ryan O'Driscoll, Chef de Cuisine at the Brown Hotel's English Grill restaurant, who whips up his take on the dish for us.

The Famous Hot Brown!! (A dish straight out of history!)
What do you get when you combine a thick slice of bread, roast turkey, Mornay sauce, bacon, and tomato? A world famous Hot Brown! These simple ingredients make such a delicious treat it has become famous all over the world. This recipe comes directly from the Brown Hotel in Louisville, Kentucky. This year (2023) the beautirul historic Brown Hotel is celebrating 100 years of hosting guests from all over the world. It was in the 1920's that the Hot Brown was invented by Chef Fred Schmidt to feed the 1200 or so hungry party-goers the hotel hosted every single night way into the wee hours. Think Roaring 20's where people partied till they dropped! I have had this delicious dish at the Brown Hotel more times than I can count. It is always good. At the hotel, this recipe is expanded to make huge Hot Brown Casseroles which they offer on their catering menu for large groups, so you can easily triple (or more) these ingredients and make one large dish to serve the entire family. Ingredients: (makes 2 Hot Browns)
2 thick slices of bread
14 ounces cooked turkey breast
6 TBSP butter
1/2 cup flour
1 cup whole milk
1 cup heavy cream
1/2 cup grated pecorino romano cheese
1 TB greated pecorino romano cheese
4 slices crisp cooked bacon
1 tomato sliced into 4 thin slices
1/8 tsp nutmeg
pinch paprika
1 tsp chopped parsley
salt and pepper to taste

Ingredients for each sandwich
- 3-4 slices roast turkey breast (about 160g)
- 2 pieces cooked streaky bacon
- 2 pieces Texas toast
- 3 slices tomato
- Mornay sauce
- Extra pecorino
Method
1. Toast the Texas toast and place it on an oven safe dish.
2. Next, add layers of turkey breast and sliced tomato.
3. Pour over the mornay sauce and top with bacon and grated pecorino.
4. Grill on high for 3-4 minutes or until golden brown.
5. Enjoy!
Ingredients Mornay sauce (makes enough for 6 sandwiches)
- 30g butter
- 30g flour
- 500ml milk
- 160g pecorino grated
- Salt and pepper to taste
Method
1. Melt the butter in a small pot over medium heat.
2. Once the butter has melted, add the flour and stir over medium heat until it's lightly toasted and well incorporated into the butter.
3. Add the milk and whisk until smooth.
4. Add the cheese and mix until melted.
5. Season with salt and pepper to taste.
