Makes 2 - Lodge Cast Iron skillet, 8 inches :
➤ Corn tortilla chips
25 ea corn tortillas
Oil for frying (avocado) :
Salt to taste
➤ Chicken fajitas
1.5 lbs chicken thighs, boneless and skinless
☞Marinade
1/4 cup olive oil, smooth :
3 TBSP lime juice
1 tsp garlic, ground :
1 tsp onion, ground :
1 tsp ancho chile, ground :
1 tsp paprika, smoked :
1/2 tsp cumin, ground :
1 1/2 tsp kosher salt or to taste
1/2 tsp black pepper, ground :
☞Veggies
2 ea bell peppers
1 ea medium yellow onion
Drizzle lime juice at the end
➤ Nacho cheese sauce
2 TBSP butter, unsalted
2 TBSP all purpose flour :
1/2 tsp paprika, smoked
1 cup whole milk + more if needed
4 oz american cheese
8 oz cheddar cheese
To taste salt
To taste black pepper
Cooked black beans, rinsed and drained

Homemade CHICKEN FAJITA NACHOS - CHILI'S COPYCAT | Recipes.net
You can now make homemade chicken fajita nachos just like the ones from Chili's! The chicken is seasoned with salt, chili powder, garlic powder, cumin, and pepper to make it extra tasty and delicious. Mixed with crunchy tortillas, sauteed vegetables, and gooey melted cheese, you'll surely prefer making your favorite dish instead.

Ingredients:
2 lb boneless & skinless chicken breasts, cubed
1-13 oz bag tortilla or nacho chips
12 oz bell peppers of your choice, preferably a mix of colors, deseeded & sliced thinly
5½ oz yellow onions, thinly sliced
2 cups pepper jack cheese, grated
1 cup sharp Cheddar cheese, grated
4 cloves garlic, thinly sliced
5 tbsp olive oil, divided
2 tsp salt
2 tsp chili powder
2 tsp garlic powder
2 tsp ground cumin
1 tsp ground black pepper
Juice of 1 lime
To Serve:
¼ cup each of sour cream, guacamole, & salsa
For Garnish:
Roughly ¼ tsp cilantro, chopped
⬇️ How to make Copycat Chili's Chicken Fajita Nachos ⬇️
0:08 Preheat the oven to 350 degrees F.
0:13 In a mixing bowl, add the chicken breast, salt, chili powder, garlic powder, cumin, and pepper. Mix to combine and allow to marinate briefly for 15 minutes.
0:50 In a wide skillet, heat half of the oil over medium heat. Saute the chicken in batches until slightly charred and no longer pink. Set aside.
1:31 Using the same skillet, heat the remaining half of the oil over medium heat. Sautee the onions until translucent.
1:47 Add the garlic and bell peppers. Continue sauteing until softened. Set aside.
2:06 In a large mixing bowl, combine sauteed vegetables, chicken, and lime juice. Toss to combine.
2:36 Lay down half the tortilla chips on a cast-iron skillet followed by half the fajita mixture, and top with pepper Jack and cheddar cheese. Repeat with the remaining ingredients. A baking casserole is a good alternative if you do not have a cast-iron skillet.
3:32 Bake until the cheese has melted, about 15 minutes.
3:32 Once baked, garnish with chopped cilantro and serve immediately with your choice of condiments.

These steak fajita nachos on the griddle were literally the best nachos we’ve ever had… whether homemade or at a Mexican restaurant! There are a few secrets to making griddle nachos the best you’ve ever had:
- Frying your own tortilla chips and adding Tajin seasoning and/or salt immediately when they come out of the oil.
- Making your own quick refried beans using canned pinto beans, some basic seasonings, and mashing them up in a skillet.
- Marinating your steak in our easy and amazing steak fajita marinade.
- Making your own Mexican style smoked white cheese dip.
Each individual component of these steak fajita nachos was incredible on its own - the smoked quest dip, the steak, the pico de Gallo, the fresh fried chips - and then when you combine them together it’s pure griddle nachos perfection!

RECIPE DESCRIPTION:
Ingredients
Tortilla chips 1⁄2 Packet
Nacho cheese 5 Tablespoon
Green bell peppers 1⁄2 Medium
Red bell peppers 1⁄2 Medium
Black pepper powder 1 Teaspoon
Salt 1 Teaspoon
Fajita seasoning 1 1⁄2 Teaspoon
Directions
MAKING
1. In a skillet on high, heat olive oil, add the onions, green and red bell pepper. Season it with black pepper, salt and mix well. Stir fry the vegetables on high heat for 5 - 6 minutes.
2. After 5 minutes, switch off the heat and add the fajita seasoning and mix well. Set aside.
3. On a serving plate, arrange the tortilla chips and drizzle all the chips with nacho cheese dip.
4. Add the stir fried vegetables onto the chips and get ready to serve.
SERVING
5. Serve these fajita nachos immediately.
