Hello guys, in today's video we are making this simple, easy, full of flavor egg curry/masala...you'll just loveeeee it.
Ingredients:
-8 eggs, hard boiled
-1tsp curry powder
-1/2tsp salt
-oil
-1tsp cumin seeds
-2medium chopped onions
-1tsp crushed garlic
-1tsp crushed ginger
-1/2tsp coriander powder
-1tsp cumin powder
-1/2tsp garam masala
-2 blended tomatoes
-1tbsp tomato paste
-1/2cup plain yoghurt/mala

Method:
Step 1: To roast the eggs
1. Boil the egg in water for 15 mins.
2. After 15 mins, remove the egg from water, de-sheel and keep it aside.
3. To a pan, add oil, turmeric powder, chilli powder and salt.
4. Keep the flame on low and mix the masala powders.
5. Make small slits on the egg and place them on the pan.
6. Shake the pan and roast the eggs for 2 mins. Keep it aside.
Step 2: To make the curry
7. To a pan, add oil, Bay Leaf, Cinnamon, Cloves, Cardamom, onions and saute.
8. Once the onion turns golden brown color, add the ginger garlic paste.
9. Saute until the raw smell leave.
10. Add turmeric powder, kashmiri red chilli powder, coriander powder, cumin powder, salt and mix well.
11. Add the slit green chillies. Saute everything on medium flame.
12. Add the tomatoes to a mixer jar and make it into puree.
13. Pour in the tomato puree and mix everything.
14. Thin the masala with water and let it simmer for 15 mins.
15. Add garam masala and cook until oil separates.
16. Thin it a little bit with 1/2 cup of water.
17. Add the roasted eggs and crushed kasuri methi. Cook for 2 more mins.
18. Dhaba Style Egg Curry is ready to be served.
19. This tasty curry can be served with chapati, roti, naan and even rice.

Ingredients for Egg Masala Curry:
- Boiled eggs- 4 (cut into halves)
- Fried onions - 2 (made from 2 medium onions- 120 gms)
- Ginger garlic paste- 1.5 tsp
- Tomato, chopped- 1 medium
- Whisked curd/ yogurt- 4 tbsp
Whole spices :
- Green cardamom- 3
- Cinnamon- 2 pieces
- Cloves- 3
Other ingredients:
- Red Chilli powder- 1 tsp
- Coriander powder- 1 tsp
- Cumin powder- 1/2 tsp
- Garam Masala powder- 1/2 tsp (Link to our Garam Masala Recipe:
- Kasuri Methi (Dry Fenugreek Leaves)- 1/2 tsp
- Salt- 3/4 tsp
- Refined oil- 2 tbsp + oil to fry the onions and the eggs
Preparation:
- Boil the eggs, shell and cut them into halves.
- Fry the sliced onions until golden in colour. Let then cool and coarse grind in a blender.
- Chop the tomatoes and whisk the curd/yogurt till smooth.
- Dry roast the fenugreek leaves and crush it with your hand once cooled.
Process:
- Heat 2 tbsp oil in a kadai/ pan and add the whole garam masala (spices). Once it splutters, add the ginger garlic paste and fry on low heat for 2 mins.
- Now add the chopped tomatoes and 1/2 tsp salt. Cook on medium heat for 2 mins and add the red Chilli powder, Coriander powder and Cumin powder. Mix and cook on low heat for 2-3 mins.
- Now switch off heat or keep heat to minimum and add the whisked yogurt. Keep stirring for a minute and then switch the heat back. Keep stirring and cooking on low heat for another 2-3 mins till the yogurt is cooked and oil separates.
- Add the crushed fried onions, mix well and cook on low heat for 2 mins till oil separates.
- Add the garam masala powder, mix and cook for a minute. Now add 150 ml of water
- and simmer for around 2mins.
- Add the fried egg halves yellow side down and cook on low heat for 2 mins.
- Flip the halves using a spoon and sprinkle and cook for 2 more mins.
- Sprinkle the Kasuri Methi powder on top. Mix gently and simmer for around 2 mins till done.
- You may add little water and salt for seasoning if required.

2 Yummy Egg Masala Curry For Dinner
Egg Masala Curry Recipe
Two great easy egg masala curry recipes, perfect for any occasion!
Ingredients #1:
1½ tbsp cooking oil
1 large onion (chopped)
½ tsp garlic paste
½ tsp ginger paste
3 green chilli
¼ tsp turmeric
¾ tsp red chilli
½ tsp salt
¼ cup water
4 eggs
¼ tsp garam masala
1 tsp coriander (chopped)
Instructions #1:
1. First, drizzle oil into a pan and place onions in - saute until light brown.
2. Next, add garlic paste, ginger paste, green chilli, turmeric, red chilli and saute for 3-4 minutes.
3. Then, add in salt and water, then crack 4 eggs into the pan (do not pop or scramble around).
4. Sprinkle garam masala and coriander into the pan, and then cook until the eggs start to set (on low heat).
5. Remember to gently flip the eggs and cook for another 2 minutes.
6. Done!

2 tbsp cooking oil
1 large onion (sliced)
½ tsp salt
1 bell pepper (chopped)
2-3 green chillies
3 large garlic cloves (chopped)
1 tsp cumin (roasted)
½ tsp red chilli powder
1 cup tomato (canned peeled)
2 tbsp water
4 eggs
3-4 tbsp feta cheese
Instructions #2:
1. In a pan, drizzle cooking oil and add onions, salt and bell pepper - stir well and saute until soft for 7 to 8 minutes.
2. Add in green chillies, garlic cloves, cumin and red chilli powder, whilst continuously mixing.
3. Next add a cup of canned peeled tomatoes and cook for 8 to 10 minutes on low medium heat.
4. Pour in 2 tbsp of water and add a pinch of salt for taste.
5. Add 4 eggs (do not crack or scramble) and sprinkle feta cheese on top.
6. Let it simmer for 4-5 minutes on low heat, until egg whites are cooked.
7. Sprinkle coriander and your egg masala curry is ready to enjoy!
