How To make Eggplant and Cheddar Omelet
1 cup eggplant
4 tablespoons olive oil
(vigin)
1 clove garlic or 1/4 t, garlic powder :
chopped if fresh
1/2 cup tomato sauce
8 eggs
1/2 teaspoon seasoned salt
1/2 cup cheddar cheese -- grated
Peel eggplant and cut into small cubes. Soak cubes in bowl of cold water for 1/2 hour. Remove, drain and dry well. Heat 3 T. olive oil in skillet the add eggplant. Saute eggplant until it begins to brown. Add tomato sauce then set pan aside. Heat remaining olive oil (1T.) in large skillet. Add eggs and cheese. Cook over low heat until they set. Spoon eggplant mixture onto center of eggs and fold over for omelet.

Eggplant Omelet
Ingredients:
3 eggs
1 eggplant
¼ cup white onion in moon halves
¼ cup shredder cheese mixture or the cheese that you like
Salt, black pepper (optional) to taste
4 tablespoons olive oil.
First, place the onion in a medium- large mixing bowl with salt and black pepper, and 1 tablespoon of olive oil and put into the microwave at medium power for 5 minutes. In the meantime, peel the eggplant and slice it. After 5 minutes, mix the sliced eggplant with the onion and 3 tablespoons of olive oil, remove and put again into the microwave at medium power for 15 or 20 minutes. When the eggplant and onion mixture is done, beat the eggs and add them to the mixture. Add salt to taste and the cheese as well. Mix everything together and pour on a greased skillet at medium heat. Cook the omelet until the eggs are done for each side. You can use a plate for turning the omelet over. And the Eggplant Omelet is done. I hope you like it!

- ¼tsp salt
- 1tsp sugar
- 1tbsp soy sauce
- 1tbsp balsamic vinegar or black vinegar
- 50ml water

Spinach, Mushroom And Cheese Omelette
recipe description:
(who can resist the perfect pairing of the trio stuffed with the silky smooth layer of egg. A perfect breakfast)
INGREDIENTS:
Oil- 2tbs
Garlic- 1/2 tbs
Mushroom- 1/2 cup
Spinach- 1 cup
Salt- to taste
Egg- 2
PROCESS:
1) Heat oil in a pan, add minced garlic and saute it for 15-30 seconds.
2) Add in your mushroom and spinach and cook until the spinach is wilted out. Add salt to it.
3) In a separate bowl beat the eggs.
4) Heat oil in a separate pan and add the eggs. Mix it quickly before it starts to set. Stick to a low flame.
5) Let the eggs settle down and be careful not to brown the base of it.
6) Once done add your mushroom- spinach mixture to one side of the omelette.
7) Top it off with some cheese slices.
8) And fold the other side and serve.
Note: you want the eggs to be creamy, not crunchy so keep an eye on the flame.
