Eggnog Cookies Recipe - How To Make Eggnog Cookies - Ellen’s Christmas Series
Hello, Merry Christmas and Happy Holidays my Friends, welcome to the fourth episode of my Christmas Series and my Southern Kitchen!
It is Cookie Season so today I am making some Cookies using a classic drink of the Holiday Season, Eggnog Cookies!
Soft, chewy, full of Eggnog and spices and frost with a creamy and decedent Eggnog Cream Cheese Frosting; perfect Treats for the Holidays and everyone will love and enjoy these!!!
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg, plus more for garnish
1/4 teaspoon ground cloves
1 cup (2 sticks) unsalted butter, softened
1/2 cup white sugar
1/2 cup packed light brown sugar
2 extra-large or jumbo egg yolks, cold
1/2 cup cold eggnog
1 teaspoon pure vanilla extract
1/2 teaspoon pure rum extract
Eggnog Cream Cheese Frosting
4 ounces (half of 8 ounce) package cream cheese, softened
1/4 cup (1/2 stick) unsalted butter, softened
3 to 5 tablespoons cold eggnog (add more or less for the consistency)
1/4 teaspoon pure vanilla extract
1/4 teaspoon pure rum extract
3 cups powdered sugar, sifted or whisked
Makes 18 to 20 Cookies
Preheat Oven to 350 Degrees
Line a 9x13 inch cookie sheet with parchment paper and set aside.
In a medium bowl, add in the flour, baking powder, salts cinnamon, nutmeg, and cloves; sift or whisk together until well combined. Set aside.
In a large bowl using a hand mixer or stand mixer with paddle attachment, add in the butter, white sugar and brown sugar; cream on medium speed until fluffy. Next add and mix in the egg yolks one at a time then add and mix in the 1/2 cup eggnog, vanilla extract and rum extract until well blended. Gradually add in the flour mixture into the butter mixture and mix until well combined. Using a spoon or small ice cream scoop, drop dough by tablespoonfuls, 1 inch apart (you can make the cookies any size that you prefer). Bake for 11 to 13 minutes or until light golden brown around the edges. Remove from the oven and cool on wire rack for about 10 minutes. Place the cookies onto a cake stand or platter then frost them with the eggnog cream cheese frosting, sprinkle with nutmeg on top, serve and enjoy!
For the Eggnog Cream Cheese Frosting
In a large bowl using a hand mixer or stand mixer with paddle attachment, add the cream cheese and butter and cream on medium speed until fluffy. Next add in the eggnog, vanilla extract, and rum extract and continue mixing until well incorporated. Add in the powdered sugar into the butter mixture and mix on low speed then onto medium until well combined.

Ingredients:
¾ cup butter
1 cup sugar
½ cup brown sugar
2 eggs
⅔ cup eggnog
1 tsp. vanilla
Pinch of salt
½ tsp. baking soda
¾ tsp. nutmeg
3 cups flour
Icing:
6 tbs prepared eggnog
2½ cups icing/powdered sugar
1 tsp. nutmeg
