How To make Egg Sponge
3 tablespoons unsalted butter
6 tablespoons all-purpose flour
1 1/4 cup milk
freshly grated nutmeg to taste 4 eggs

1 pinch cream of tartar
Preheat oven to 350 degrees.
In a saucepan melt the butter over low heat, stir in the flour, and cook the roux, stirring, for 3 minutes. Remove the pan from the heat and add the milk, heated, in a stream, whisking. Simmer the mixture, whisking occasionally, for 5 minutes, add the nutmeg and salt and pepper to taste, and transfer the mixture to a large bowl. Whisk in the egg yolks, 1 at a time, whisking well after each addition, and whisk in the Parmesan. In a bowl with an electric mixer beat the egg whites with a pinch of salt until they are frothy, add the cream of tartar, and beat the whites until they just hold stiff peaks. Stir one third of the whites into the mixture and fold in the remaining whites gently but thoroughly.
Spread the sponge batter evenly in a buttered 15 1/2 by 10 1/2-inch jelly roll pan lined with buttered and floured waxed paper and bake it for 25 minutes, or until it is golden and firm to the touch. Cover the egg sponge with a sheet of buttered waxed paper, buttered side down, and a dish towel, invert a baking sheet over the towel, and invert the egg sponge onto the baking sheet. Remove the jelly roll pan and the waxed paper carefully and trim 1/4-inch from the short sides of the egg sponge. Fill the egg sponge with the filling of your choice while it is still warm and flexible.

Recipe :
Sponge Cake
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves: 3-4
Ingredients:
3 eggs
115g butter
110g flour
115g sugar, powdered
2 tbsp cornflour
3 tbsp milk
1 tsp baking powder
1 tsp vanilla essence
Method:
Preheat the oven to 180C for 15 minutes.
Grease and dust a 7” cake tin and line the bottom with butter paper.
Sift together the flour, baking powder, salt at least thrice and set aside.
Now beat the butter till pale and fluffy. Add the powdered sugar and whisk again till pale and creamy and fluffy.
Separate the egg yolks and whites. Add the egg yolks to the butter mixture and beat again. Now add the vanilla essence and whisk well.
Separately beat the egg whites to a stiff peak stage.
Now add 1/3rd of the flour to the butter and cut and fold in lightly. Add half the milk fold in. add 1/3rd more flour and fold in. Add remaining milk and fold in. Finally fold in the remaining flour.
Add 1/4th of the egg whites and fold in. now add the remaining egg whites and fold it in.
Immediately pour the batter in the prepared pan and bake in the preheated oven for about 35 minutes or till a skewer inserted in the centre of the cake comes out clean.
Sponge Cake (Eggless)
Preparation Time: 15 minutes
Cooking Time: 35 minutes
Serves: 3-4
Ingredients:
1 cup flour
1 cup sugar, powdered
1 cup milk
2 tbsp vinegar
1 tsp baking powder
1 tsp vanilla essence
1/2 tsp baking soda
1/4 tsp refined oil
Method:
Preheat the oven to 170C for 15 minutes.
Grease and dust a 7” cake tin and line the bottom with butter paper.
Sift together the flour, baking powder, salt at least thrice and set aside.
Add the vinegar to the milk and set aside for 5 minutes.
Then add the powdered sugar to the milk and blend well. Add the vanilla essence and mix.
Add the baking soda to the mixture and set aside for 5 minutes.
If you want a whiter cake, skip the baking soda and add an extra ¼ tsp of baking powder to the flour.
Now mix in the dry ingredients.
Finally mix in the oil.
Immediately pour the batter in the prepared pan and bake in the preheated oven for about 35 minutes or till a skewer inserted in the centre of the cake comes out clean.
