How To make ENCHILADAS
Ingredients

shortening, (rounded)
1
tablespoon
flour

tablespoon
red chili powder
2
cup
water
1
corn tortillas
2
pound
lean ground beef
1

onion

ripe avocado, diced
1
mozzarella cheese, or cheddar, monterey jack, shredded as desired
1
salt, to taste
Directions:
ENCHILADAS: To make sauce, melt shortening in skillet. Add flour; mix
well.
Stir in chili powder and water. Bring to boil, cooking and stirring until
thickened. (Should be thick enough for dipping corn tortillas.)
FILLING: Cook ground beef until brown. Add diced onion, avocado and salt;
mix
thoroughly.
Dip corn tortillas in sauce. Fill with meat mixture and lots of cheese.
Roll and serve piping hot.

Veg Enchiladas Ingredients
For the filling
1 tbsp olive oil
1 tbsp chopped garlic
3 white spring onions chopped
1 large green capsicum chopped
1 cup Rajma beans (soaked overnight & boiled in salted water till soft)
Salt to taste
1 tsp sweet paprika
1 tsp cumin powder
1/2 cup onion greens
For the Ranchero sauce
1 tbsp olive oil
2 large red capsicum
5 large tomatoes
1 tbsp garlic
2 white spring onions
1 tbsp refined flour
4 tbsp malt vinegar
2 tbsp sugar
Salt to taste
1 tsp cayenne pepper
1 tbsp parsley
Few leaves of basil
1 cup Water
1 tbsp habanero sauce/any other smoked spicy sauce
For the assembly
6 nos tortillas discs
Mozzarella cheese as required
For garnish
Parsley sprigs
Olive oil
Method
- In a pan add olive oil, garlic, whites of spring Onion, capsicum, boiled beans ( boiled with salt & water ) add some salt, sweet paprika and cumin powder. Stir it properly
- Mash the beans with spoon or potato masher.
- In a pan add olive oil, red peppers, crushed garlic, whites of spring Onion, tomatoes, flour, malt vinegar, sugar, salt, cayenne pepper, parsley and fresh basil.Also add little bit of water
- Blend the mixture and keep it on flame for 2-3 minutes and add habanero sauce
- Take a baking pan and add the ranchero sauce in the bottom
- Take the tortilla disc and the bean mixture, to which add onion leaves
- Fill the disc with bean mixture and roll them. Keep them in the baking pan over the ranchero sauce.
- Top it again with ranchero sauce. Add cheese slice ever the baking pan
- Keep it in the oven for 10 minutes on 180 degrees

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder

Ingredients For How to Make Vegetable Enchiladas:
For Corn Tortillas:
Maize flour - 1 cup
Plain flour/Maida - 1 cup
Salt - 1 tsp
Baking powder - 1 tsp
Butter - 2 tbsp
Boiling hot water - to make dough
For Sauce:
Olive Oil - 2 tbsp
Plain flour/Maida - 1 tbsp
Smoked Paprika - 1 tbsp
Garlic - 10-12 cloves
Kashmiri red chilli - 8 (deseeded)
Onion - ½ (sliced)
Tomatoes - 2 (roasted and chopped)
Vegetable stock - 1 cup
Coriander powder - 1 tsp
Dried oregano - ½ tsp
Cumin powder - 1 tsp
Salt - as per taste
Black peppercorns - ½ tsp
Sugar - ½ tsp
Vegetable stock - ½ cup + ½ cup (for layering before baking)
Dark Chocolate - 10 gm
Filling:
Oil - 1 tbsp
Boiled rajma - 2 cups
Red chilli powder - 1 tsp
Oregano - 1 tsp
Cumin powder - 1 tsp
Salt - as per taste
Frozen sweet corn - 2 tbsp
Paneer - 100 gm (small cubes)
Vegetable stock - ½ cup
Capsicum - ½ (chopped cubes)
Onion - 1 (chopped fine)
Green chilli - 2 (chopped)
Chopped coriander - 2 tbsp
For assembling
Tortillas
Sauce
Filling
Mozzarella cheese
Cheddar cheese
