How To make Dried Tomato Crostini
-Waldine Van Geffen VGHC42A 12 Sun-dried tomato halves;
-dry pack 1/4 c Boiling water
2 tb Balsamic or red wine vinegar
1 md Tomato; peel, seed, chop
1/4 c Red onion; finely chop
4 Pitted ripe olives; minced
1 tb Olive oil
1 1/2 ts Parsley; snipped
1 cl Garlic; minced
1/2 ts Capers; drain, chop
Cracked black pepper 8 oz Loaf baguette-style French
-bread Parmesan or Mozzarella;shred Fresh thyme sprigs; optional Combine dried tomatoes, water and vinegar. Let stand for 15 to 20 minutes to soften tomatoes. Drain. Discard liquid. Cut dried tomatoes into thin strips; return to bowl. Stir in ripe tomato, onion, olives, oil, parsley, garlic and capers. Season with pepper. Bias-slice bread into 24 pieces, about 1/2" thick. Place bread slices on a baking sheet. Bake in a 350~ oven for 3 to 5 minutes or till light brown. Turn bread over; bake for 3 to 5 minutes more or till light brown. Spoon tomato mixture onto toasted bread and serve immediately. Or, if desired, sprinkle added Paremsan cheese or mozzarella over tomato mixture; return to oven for 3 to 5 minutes more or till cheese is melted. Garnish with fresh thyme sprigs, if desired. Bruschetta with Semi Dried Tomatoes and Goat Cheese
For me, Bruschetta has to be tomato and basil. The basil has to be fresh and the tomatoes ripe, as in this case, semi dried for am intense sweet flavour. The name Bruschetta originated from the meaning of toasting over hot coals. We don't all have hot coals so the griddle pan is the next best thing. Don't go and use a toaster, it simply won't give you the right taste. You need that charred flavour with hints of smokiness. Use the best olive oil you can afford, yes it has to be first pressed virgin. This is a simple dish with few ingredients so it deserves the best! (and so do you) I used goat cheese, but you can use other soft cheeses like, mozzarella, Bocconcini, even fetta.

Here is a quick recipe to Maithily's Sundried Tomato Crostini.
Ingredients:
1 Cup Sundried Tomatoes
1 Clove Of Garlic
1 Tablespoon Castor Sugar
Salt & Pepper to Taste
2 Tablespoon Olive Oil
1 Teaspoon Red Chilli Flakes
¼ Cup Mozzarella Cheese
5-6 Basic Leaves
1 French Baguette
Method:
1. Pre-heat the oven to 200°C.
2. Cut the French Baguette into half inch-thick slices.
3. Brush the crostini base with olive oil and bake for 5-6 minutes at 200° C until the bread is golden brown.
4. For the sundried tomatoes tapenade, blend soaked sundried tomatoes, garlic, salt, pepper, red chili flakes, castor sugar and extra virgin olive oil into a fine paste.
5. All a few basil leaves to the blender and blitz it again.
6. Once the crostini are baked, spread the tapenade on the bread and top it with cheese.
7. Bake in the oven for 2-3 minutes at 200° C.
