How To make Dried Tart Cheery Scones
3 c + 3 T flour
6 1/2 ts Baking powder
10 ts Milk
1/2 c Dried tart cherries; cut up
1/2 c Sugar
1/2 c Chilled butter; cut up
1 Egg; beaten
1 ts Orange or lemon rind;grated
Preheat oven to 350. Lightly grease baking sheet. Stir together the flour, sugar and baking powder. Cut in butter until mixture resembles crumbs. (A food processor works great.) Stir in dried cherries and grated rind. Combine milk and egg. Mix into dry ingredients, gather dough into a ball. Roll dough out 1/2" thick onto a lightly floured surface. Cut into 3" circles with a sharp knife or biscuit cutter. (A glass does not work well because it crimps the edges and they will not rise as well.) Arrange on a baking sheet, 1" apart. Bake until firm to touch, about 20 minutes. Serve warm. From: American Spoon Foods

Cherry Tart Recipe Demonstration - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Cherry Tart. This pretty Cherry Tart has an almond flavored sweet pastry crust that is filled with an almond flavored cream (Frangipane) and topped with sweet Bing Cherries. When it comes out of the oven, to make the tart glisten, and to add flavor, the entire surface of the tart is brushed with an apricot glaze and the edges of the tart are sprinkled with either pearl sugar (my favorite) or sliced almonds. Celebrate the start of spring or Easter Sunday with these 13 minute Cherry almond scones and cherry compound butter. Bake these inside but enjoy them outside during a garden tea party or even as a snack while sitting under a tree admiring the blossoming flowers. This recipe includes cherries soaked in almond liquor for that extra special touch.
Ingredients:
Scones:
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1 cup cold Heavy cream
1 stick of cold butter
1 teaspoon pure vanilla extract
1 large egg
1/2 cup dried cherries that have been reconstituted in almond liquor
Icing drizzle
Powdered sugar
1/4 teaspoon Almond extract
Heavy cream
Compound butter:
1 stick butter
Cherry jam or preserves
PREHEAT OVEN 425F
* In a cold bowl sift together flour, sugar, baking powder, and salt.
* Squeeze extra moisture out of reconstituted cherries either by pressing them into a tea towel or cheesecloth, or using a fork to press them into the side of a strainer of colander
* Add reconstituted cherries into flour and give them a quick toss to coat them in the flour
* Grate cold butter into flour mixture
* Use a pastry cutter to cut butter in to flour until it resembles coarse meal or sand.
* Add vanilla and egg into the cold heavy cream and lightly combine with cream
* Add cream to flour and mix with a wooden spoon until it just about combined
* Use tips of fingers to get the dough to come together in a loose ball
* Turn the dough out onto the countertop or baking mat and form ball into a disc shape about 2 inches thick and round the outside edges
* With a knife or pizza cutter cut circle into 6-8 wedges depending on the size of scones you’re looking for
* Put scones on an un-greased baking sheet and bake 425 degrees for about 12-15 minutes, until a light golden brown color is achieved. They will continue to firm up when pulled out of the oven
* Once cooled drizzle with almond icing and top with almonds
* Enjoy with cherry butter or simply plain
