My Spanish Christmas brown crab dressed with sparkling cava
Back in Spain, we eat a lot of shellfish and crustacea on Christmas Day, anything from crab to barnacles to langoustines. Every Christmas Eve we go to our family house in the mountains of Madrid to spend Christmas together. This recipe for crab with cava is a Christmas staple in my family and is my uncle Julian’s favorite recipe. He taught me how to prepare it when I was about twelve years old – I suspect now that he was bored of preparing it every year and wanted someone to take over the responsibility. So now I’m passing it on to you – I hope you enjoy it!

Spicy Raw Marinated Crab
Recipe ????????????
* 2 packs of frozen crab
* 5 tbsp of sugar
* 6 tbsp of soy
* 7 tbsp of red pepper flakes
* 5 tbsp of fish sauce
* Green onion to garnish
* 1 tbsp of sesame seeds
* 8-10 cloves of garlic
* 1 tbsp corn syrup
* 2 tbsp of mirin
* 1 tbsp of minced ginger
* 2 tbsp of sesame oil
1. Defrost the frozen crab and make sure to carefully rinse each piece of any debris or gunk. Cut off the ends of each leg with a scissor and make cracks into the thicker claws. This will help the marinate permeate into the flesh.
3. Finely mince the ginger and garlic. Combine with the red pepper flakes, soy sauce, sugar, fish sauce, mirin, corn syrup, sesame seeds, and sesame oil.
4. Mix the marinade with the prepared crab. BE CAREFUL and use a spatula, the claws are sharp.
5. You can let it sit in the fridge for a few hours or a day and it’s ready to eat! Garnish with sesame seeds and green onions.
6. *Make sure to finish it within 3-4 days!

Ingredients (US & METRIC):
400g/ 14 oz linguine
1 tbsp olive oil
30g/ ¼ stick unsalted butter
2 cloves garlic, finely sliced
1 red chilli, deseeded & finely chopped
Finely grated zest of a lemon and a good squeeze of juice
2 courgettes, julienned or coarsely grated
50g/ 2 oz brown crab meat
200g/ 7 oz white crab meat
3 tbsp finely chopped chervil or parsley
Sea salt and freshly ground pepper
