How To make Down South Barbecue
2 onions
sliced, divided
4 to 5 lbs. pork shoulder roast :
or fresh picnic
5 to 6 cloves
2 cups water
1 onion chopped
16 oz. bottle barbecue sauce
salt and pepper :
to taste 1 teaspoon vinegar -- if too sweet
hamburger buns or Kaiser rolls pickle slices
Put 1 sliced onion in bottom of crockpot. Add pork roast, cloves, water and one more onion, sliced, on top. Cover and cook overnight or 8-12 hours on Low. Remove meats. Cut away bone and fat. Drain away most liquid from pot. Reserve in refrigerator. Cut meat into small pieces and put back into pot. Add chopped onion, barbecue sauce, salt and vinegar if too sweet. Add back fat-skimmed pork liquid as needed. Cover and cook additional 1-3 hours or High or 4-8 hours on Low. Stir 2-3 times and break up large meat chunks. BBQ Old School Southern Style Mop Sauce Recipe

recipe for basting BBQ meats.
The BBQ Sauce Recipe That Can Win Friends and Influence People
Learn how to make a sweet and spicy BBQ sauce that will taste better than anything you can buy on a shelf. I developed this specifically for BBQ brisket. This recipe uses fresh onion, garlic, lemons, limes and a whole lot of butter.
The quantities in the video are for pairing with 2 to 3 briskets at a large barbecue. If you're having a smaller party, just divide the recipe in half.

Ingredients
- 1 onion
- 4 cloves garlic
- 3 cups brown sugar
- 5 limes
- 2 lemon
- 1 1/3 cup apple cider vinegar
- 3 cups tomato sauce
- 1 cup molasses
- 2 tbsp dry mustard
- 4 tbsp Worcestershire
- 2 tsp smoked paprika
- 2 tsp chipotle
- 2 tsp salt
- 2 tsp black pepper
- 4 sticks butter
Instructions
- Dice 1 onion
- Mince 4 cloves of garlic
- Heat oil in a large pot on low
- Add onions. Stir occasionally until they start to caramelize
- Once onions are caramelized, add garlic. Cook for about 1 minute
- Add brown sugar. Stir to prevent burning
- Mix apple cider vinegar and filtered juice of the lemons and limes in a measuring cup
- Once brown sugar has melted, add the liquids
- Stir until mixed
- Move contents of pot to a blender and purée them
- Move the blended mixture back to your pot
- Add tomato sauce, molasses and Worcestershire sauce
- Add remaining dry ingredients and stir
- Finally, add the 4 sticks of butter. Stir them in as they melt
- Let simmer for 30 minutes
- Let cool before bottling
