Fireman’s Breakfast Casserole (Recipe is in our Vol. 4 Cookbook)
12 EGGS
1 CUP HEAVY CREAM OR HALF AND HALF
1 LB PORK BREAKFAST SAUSAGE (SWAGGERTY’S FARM SAUSAGE USED)
16 OZ. SHREDDED CHEDDAR CHEESE (OR OTHER CHEESE CAN BE USED)
1 SMALL CAN OF MUSHROOMS (OPTIONAL)
1/2 LARGE ONION CHOPPED
1 GREEN PEPPER CHOPPED
SALT AND PEPPER
2 TBSP. MARGARINE OR BUTTER
Grease a 9” x 13”-inch pan. Break eggs into pan and poke each yolk (or lightly scramble). Pour
cream over eggs. Add half of grated cheese. Brown sausage and drain. Add onions and
mushrooms to sausage and cook with margarine or butter. Place sausage mixture over eggs evenly and cover with remaining cheese. Bake at 350 degrees for 45-60 minutes.

Farmers Breakfast - Easy Meal Prep Breakfast - Down On The Farm Breakfast Recipe
This is an extremely easy breakfast for someone on the go! You can eat this plain or as a breakfast burrito, but expect to have leftovers for days!

INGREDIENTS
1 pound Bacon cooked
2 cans New Potatoes
2 medium Onions diced
1 Green Pepper diced
18 Eggs beaten
1 cup Milk
1 tablespoon Garlic Powder
Tabasco Sauce
INSTRUCTIONS
Cook bacon and reserve grease.
Drain potatoes and slice not more than 1/4 in thick.
Brown potatoes in reserved bacon grease.
Add onions and green peppers.
Beat eggs and add milk.
Break cooked bacon into small chunks and add to mixture.
Add garlic powder and Tabasco to taste.
Add to potatoes and onions.
Stir often until set.
