12 oz Bowtie pasta
12 oz Tri Color Rotini pasta
4 TBL Salt
2 TBL Dijon mustard
1/4 c Red wine vinegar
1/4 c Apple cider vinegar
2 pkg. zesty Italian seasoning mix
2 TBL olive oil
12 green olives diced
1/4 c Banana peppers
1 can Chickpeas
1 c Zesty dill pickles diced
1 c Artichoke hearts diced
1 medium Red onion diced
1 c Colby jack cheese diced
1 c Gruyere cheese diced
12 Cherry tomatoes diced
Salt/ pepper to taste
Dijon dressing:
Add the Dijon mustard, red wine vinegar, apple cider vinegar, Italian seasoning packets and olive oil. Mix well, add salt and pepper, if needed. Set aside.
In a large pot, heat water and add the salt and bring to a boil. Add the bowtie pasta to the boiling water. Stir. After 4 minutes, add the rotini pasta and boil for another 10 minutes. Remove and pour pasta into a colander. Add pasta to a large bowl. Add the Dijon dressing and the remainder of the ingredients. Mix well adjust for flavor.

Ingredients:
4 oz fusilli or penne pasta, cooked and cooled
8 oz yogurt (or sour cream)
⅓ cup breadcrumbs, toasted, plus extra to garnish
3 tbsp red wine vinegar
1 tbsp dijon mustard
1¼ cups chicken breasts without skin, cooked and diced
¾ cup broccoli florets, blanched and cooled
½ cup tomatoes, small dice, and seeded
⅓ cup red onions, small dice
¼ cup black olives pitted
Salt and ground black pepper to taste

0:09 In a mixing bowl, combine the yogurt or sour cream, vinegar, mustard. Mix until well incorporated.
0:25 Season with salt and ground pepper to taste. Adjust accordingly.
0:36 In another mixing bowl, combine the rest of the ingredients, except for ¼ cup of chicken breasts and breadcrumbs.

PASTA SALAD RECIPE
1 (16-ounce) box of Fusilli pasta gluten-free works as well
1/3 cup extra virgin olive oil
1/3 cup red wine vinegar
2 cloves garlic crushed
1 teaspoon Dijon mustard
1 teaspoon Italian seasoning
1 teaspoon sea salt
1/2 teaspoon black pepper
1 (14-ounce) can of quartered artichoke hearts drained
1/2 cup Kalamata olives cut in half
1 1/2 cup bell pepper diced (I like to use yellow and orange)
1 cup baby tomatoes cut in half
1/2 cup celery thinly sliced into half-moons
1/2 red onion finely diced
1/2 cup chopped fresh basil
INSTRUCTIONS
Cook pasta according to package instructions until al dente. While the pasta cooks, whisk together extra virgin olive oil, red wine vinegar, garlic, mustard, Italian seasoning, salt, and pepper in a large bowl.
Drain the pasta and add it right into the dressing. Toss to coat. Let cool, tossing once or twice so the pasta can absorb all the flavors of the dressing.
Add in artichoke hearts, olives, bell pepper, tomatoes, celery, onion, and basil, and stir well to combine. Serve and enjoy or chill until ready to serve.
NOTES
Store the leftover salad in an airtight storage container in the refrigerator for about 5 days. Before serving again, give it a good stir and taste + season again as needed. This salad is great served at room temperature or chilled.

Looking to make a quick and easy Summer pasta salad without wasting time and money running to the store for ingredients?

If you're more into following a recipe here are some rough steps to take to create the same Dijon Dill Pasta Salad that I did:
1. Cook 1/2 a box of pasta and then rinse with cold water.
2. Roughly chop any raw vegetables you want to add to the pasta salad. I used Cucumber, Tomato, Red Onion, Carrots and 1 can of Chickpeas.
3. Create your homemade dressing. For this recipe, I made Dijon Dill Vinaigrette, but you could also make any of the homemade dressing recipes I have listed on our blog:
4. Toss everything together and enjoy!
Dijon Dil Vinaigrette Recipe
-1/2 Cup Olive Oil
-1/2 Cup Apple Cider Vinegar
-2 TBS diced Garlic
-2 TBS Dijon Mustard
-1 Large Bunch of fresh Dill chopped up
