How To make Devilled Crab In Cucumber Cups.
3 c Cooked crab meat, flaked.
2 ea Hard boiled eggs, chopped.
1/4 c Lemon grass, sliced fine.
1/4 c Onion, chopped.
2 tb Nam-prik Pao.
2 tb Fish sauce.
3 tb Lime juice.
1 tb Sugar.
2 tb Scallions, chopped.
2 tb Corianders leaves, chopped.
Cucumber(s). Mix all ingredients together and fill cucumber cups. To make cucumber cups - Peel and cut cucumber crosswise approximately 3 inches thick, and scoop out seeds to make cups. Mix 1/2 cup white vinegar with 1/2 cup water, 1 tb salt, and 1/4 cup sugar. Add the cucumber cups and marinate for about 1/2 hour, then drain off and discard liquid.

CRAB CANAPES
Ingredients
¾ cup canned crabmeat
12-16 salted biscuits
1 spring onion with greens, finely chopped
2 teaspoons mayonnaise
Salt to taste
Crushed black peppercorns to taste
3 green olives, pitted
3 black olives, pitted
½ teaspoon chopped fresh red chillies
½ teaspoon grated ginger
½ teaspoon lemon juice
1 teaspoon olive oil
½ teaspoon Tabasco sauce
1 medium cucumber, peeled
3-4 fresh parsley sprigs + for garnishing
Method
1. Take crabmeat in a bowl. Reserve some spring onions with
greens and add remaining alongwith mayonnaise, salt,
crushed peppercorns, sliced olives, half the fresh red chillies,
ginger, lemon juice, olive oil and Tabasco sauce and mix well.
2. Slice cucumbers and soak the moisture by placing the slices
on an absorbent paper.
3. Place biscuits on a serving platter. Put the cucumber slices on
it.
4. Finely chop parsley sprigs and add to the crabmeat mixture.
Mix well.
5. Top the cucumber slices with a small portion of the prepared
crabmeat mixture. Garnish with parsley leaves and remaining
fresh red chillies.

After the death of my mother, I took over the responsibility of my sister’s care. Beverly, like some others with Down’s Syndrome, she had developed a weight issue. The challenge and mission was to change my sister’s lifestyle so that she could live healthier. After one year of routine exercise and a diet that excluded red meat, refined sugar and fatty foods, Beverly lost over 85 pounds.
Ingredients:
½ pack of 4 oz. sour cream cheese
6 oz. crabmeat
1 tsp. reduced fat venenaise
¼ teaspoon sea salt
¼ teaspoon Worcestershire sauce
¼ teaspoon paprika
36 melba toast rounds
¼ parsley flakes
Prep time: 10 min.
Cook time: 3 min.
Cooking Instructions:
-Beat soy cream cheese until soft. Add crabmeat, reduced fat Venenaise, sea salt, Worcestershire sauce, mix thoroughly.
-Spread bread rounds softly with generous amount of crabmeat mixture.
-Sprinkle with parsley flakes and paprika.
-Broil (low heat) 3 to 4 minutes or until golden brown.

R E C I P E

2 large cucumbers
4 ounces soba / bucketwheat noodles
2 tablespoons rice vinegar
1 1/2 tablespoons soy sauce
2 tablespoons soba dipping sauce
1 tablespoon sesame oil
2 tablespoon nano shoots or 3 green onions thinly sliced
2 tablespoon pink and white kamaboko crab stick
or imitation crab , cut into small bits
chili oil for drizzle
salt to taste
Peel the cucumbers. Cut into rounds 1 inch thick. Using a teaspoon or a melon baller to scoop out and hollow out the walls to create a cup. Make sure it is round enough to stuff soba noodles in.
Bring a pot of water to a simmer and cook the soba noodles 6 to 8 minutes. Drain and rinse the noodles under cool water. Transfer to separate bowl.
Mix together the rice vinegar, soy sauce, soba sauce and sesame oil in a small bowl. Pour half the sauce over the noodles. Add the nano shoots or green onions to the noodles - save few for garnishing, and gently toss the noodles to coat them with the sauce. Be careful, soba noodles can be fragile!
Pack each cucumber cup with noodles, twirling them slightly to help them settle in the cup. Pour leftover sauce or soba dipping sauce over the noodles in each cup and sprinkle the tops with more nano shoots and crab stick for that summer color pop!
