How To make Deviled Ham Muffins
6 ea English muffins; *
9 oz Deviled ham; 2 cns
1/4 ts Oregano
12 ea Apple rings; **
24 oz Cheddar; md, ***
* Muffins should be split, toasted and buttered. ** Apple Rings should be cored but unpeeled. *** Slice the cheese into 12 2-oz slices and then slice them diagonally. ++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ ++++ Combine the deviled ham and oregano and spread on the cut sides of the muffins. Top with an apple ring. Place 2 cheddar triangles on each muffin and broil until the cheese melts. Serve hot.

Ina's Carrot Cupcakes | Drunken Deviled Eggs | Easter Baked Ham Dinner - Spring Flowers
I always start planning early for any celebration or holiday dinner as that is half the fun for me! I also set up a schedule so that items are started and prepped ahead of the special day so that I can enjoy it with everyone. Join me as we put together an Easter feast and I'll take you through my process. This Easter I'm making Spiral Baked Smoked Ham with pineapple served with gnocchi and garden peas, drunken deviled eggs and Ina's Carrot Cake cupcakes.

Baked Ham:
11 lb Spiral Smoked Ham
Can of Pineapple slices in their juice
1 Coca Cola (not diet)
Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
Preheat the oven to 325 degrees F.
Make the glaze: In a medium pot over medium-high heat, combine the dry spice packet that came with the ham and add to it 1/2 bottle of Coca Cola (not diet)! Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
Place a rack in a roasting pan. Put the ham on rack and pour the pineapple juice into the base of the roasting pan.
Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound or to about 140 degrees.
In the last 30 minutes of baking, pour the glaze over the surface of the ham, getting it between the slices as much as you can. Return the ham to the oven UNCOVERED. Baste every 10 to 15 minutes until done.
Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!
Brine for Drunken Deviled Eggs:
Mix together the brine in sealable container and add 8 minute boiled eggs, peeled
Leave in fridge overnight
2 cups Lakewood Beet Juice with lemon juice
1 cup Apple Cider Vinegar
1/2 cup brown sugar
10 whole black peppercorns
Scoop out yolks into a bowl and mix with mayonnaise, mustard, splash apple cider vinegar, salt and pepper. Fill each egg with this mixture and top with whatever you like! I used fresh dill, kettle chip, chopped cornichons, salmon roe...each were a little different.

These Are 10X Better Than Regular Deviled Eggs
I personally love a good deviled egg but the main problem I have with them is the lack of texture, it's just mushy on top of mushy. These eggs really fix that problem with flying colors.
Deviled Eggs Full Recipe:
12 eggs (save 2 for breading)
1/4 cup + 1 tbsp mayo
1/4 cup + 2 tbsp sour cream
2 1/2 tbsp mustard of choice (I used Savorra)
1 tsp Maldon salt
1/2 tsp black pepper
3 oz prosciutto deep fried
1/2 bunch chives finely sliced
1 dill pickle cut into little cubes
few sprigs of fresh dill
1/4 cup all-purpose flour
2 reserved eggs beaten
1 1/2 cups panko bread crumbs
10 sprigs of fresh thyme picked
3 sprigs of fresh or dried oregano
