How To make Danish Hash with Fried Eggs (Biksemad)
1/2 c Butter or margarine (1/4 lb.
2 Large onions, finely chopped
2 c Peeled cooked potatoes, cut
3 c Cooked lean beef, cut in 1/2
1/4 c Regular strength beef broth
1 t Worcestershire
1/2 t Salt
1/8 t Pepper
4 Eggs
Butter lettuuce and cherry t Coarse (kosher-style) salt ( Fat grams per serving: Approx. Cook Time: :45 In a wide frying pan over medium heat, melt 3 tablespoons of butter. Add onions and cook slowly, stirring occasionally, until they are limp and golden (about 15 minutes). When onions are cooked, transfer to another container and keep warm. Then, in the same frying pan over medium-high heat, melt 3 tablespoons more of the butter and cook potatoes, turning as needed to brown on all sides; add to onions and keep warm. Add 1 tablespoon more butter to the pan and cook beef, stirring occasionally, until it is browned and heated through. Add beef to container with onions and potatoes; keep warm. Again using the same frying pan add broth, Worcestershire, salt, and pepper. Cook over high heat until reduced by about half; then pour over hash mixture. Mix lightly but thoroughly. Using the same pan, melt 1 to 2 tablespoons butter and fry eggs until done as desired. Spoon hash onto a warm platter and arrange eggs on top. Garnish with the lettuce and tomatoes. Serve with coarse salt, if you wish. Makes 4 to 6 servings. Biksemad (bick-sa-mod) is the Danish name of this delicious beef and potatoe hash. I love to use left over foods like ham, sausage and meatballs that’s what I used for this cooking.
You just need to do is parboil slice potato and fry it till golden brown. After that sauté slice onion and mix all the remaining ingredients Season with Salt, pepper, chili powder. Eat it with sunny side up eggs and beets

If you are a Dane then chances are you are a big hotdog fan. Growing up as a kid there was one on almost every corner. Whether you lived in a big city or a small town, they were everywhere. At one point in Copenhagen there were over 600 wagons in the city. They say that the Danish dog arrived in Denmark in 1921 from the U.S. . They set up on the corners as little polsevogne. Self contained stands with little motors that propelled them to their spot in the mornings and took them home at night. Many have overhead and side baffles that folded out from the covered frame to shield customers from the cold winter wind and rain as well as the summer sun. You could cuddle in and order a hotdog and chocolate milk or soda to go with it. Some places you could even get a beer. Originally it was served on a piece of wax paper with a very red hotdog and a small toasted white bun with mustard and ketchup. Shortly thereafter they slit the small bun and inserted the dog. And so the Danish dog was born. When I was a child in the 60's and 70's, the toppings were pretty straight forward. Your choices were, raw onions, mustard, ketchup, remoulade (see recipe below), and/or crispy fried onions. Later they added a cucumber salad (see recipe below). You can get both a boiled dog or a fried dog if you wish or some have other sausages if you like. The hero of the story is the red dog.
Danish Hash Biksemad
Danish biksemad translates to leftover meals that have been mixed together. It is also known as pyttipannu in Sweden and means little bits in the pan. It's usually served with a fried egg.

Who's ready for Spring/Summer?!?! We are soooo excited!!! All of the great summer salad recipes to make! The Danish cuisine has a lot of sweet and sour and this Danish side dish has a little bit of both. Here is a homemade Danish Cucumber Salad that is tasty and quick to make. The recipe is easy to make and only requires a few easy ingredients that you probably have in your kitchen cabinet.
Ingredients:
* one English cucumber
*a sprinkle of salt for squeezing out the cucumber juice
* 1 dl or 1/2 a cup of water
* 1 dl or 1/2 a cup of sugar
* 1 dl or 1/2 a cup of distilled white vinegar
*a sprinkle of salt and pepper for taste.

What to eat with the Danish Cucumber Salad? In Danish homes, the refrigerator normally has a bowl of cucumber salad waiting to be used for either lunch or dinner. Typically the cucumber salad (agurkesalat) accompanies meat dishes. Danish hot meals such as frikadeller (Danish meat balls) or flæskesteg (roast pork with crackling) or stegt kylling (roast chicken) has the Danish cucumber salad as a side dish. If you make enough Danish cucumber salad, you can have it with leftover foods the next day. Also, Danish cold lunches such as an open sandwiches, known as smørrebrød, are decorated with a variety of fine ingredients including the cucumber salad (agurksalat) as a topping. Vidste du, at da biksemad blev op fundet, blev den serveret som en særlig ret på en af Danmarks fineste restauranter? Biksemad krævede, at alting blev tilberedt meget nøje. I dag er biksemad bare verdens bedste reste-ret.
Du skal bruge til biksemad / Ingredienser
1 løg
800 g. kogte kartofler
Ca. 250 g. tilberedt kød (f.eks. skært oksekød, steg, hamburgerryg, skinke, frikadelle, bøf)
½ spsk. smør til stegning
1 spsk. olie til stegning
4 æg
½ tsk. salt
1 knivspids peber
1-2 spsk. engelsk sovs eller worchestersovs
Tilbehør:
1 dl. persille
Syltede rødbeder
Evt. lidt sennep
Køkkenredskaber
1 køkkenvægt
1 spiseske
1 teske
1 decilitermål
1 skærebræt
1 stor skarp kniv
2 stegepander
2 paletknive
1 viskestykke
Sådan gør du
Vask hænder :)
Find alle ingredienserne frem.
Kom vand i en lille skål, og skyl persillen i vandet.
Hak persillen fint. Klik på videoen og se, hvordan du hakker krydderurter fint.
Pil og hak løget i grove tern.
Skær kartofler og kød i små tern.
Kom smørret og ½ spiseske olie på en stegepande med høj kant. Varm den op til høj varme.
Kom kartoflerne på stegepanden. Rør godt rundt. Lad det stege i cirka 10 minutter. Rør rundt en gang imellem, så det ikke brænder på.
Skru ned på middel varme og tilsæt løg. Steg dem med cirka 5 minutter.
Skru ned på svag varme. Tilsæt kødet og engelsk sovs og rør rundt.
Lav så spejlæggene, mens kødet luner. Kom ½ spiseske olie på en ny stegepande og varm den op til middel varme.
Slå et æg ud i en kop og hæld det forsigtigt på stegepanden. Gør dette med alle fire æg. Klik på videoen og se, hvordan du slår æg ud. Vask hænder, når du har rørt ved rå æg.
Steg æggene i 2-3 minutter ved lav varme, til hviden er stivnet.
Smag biksemaden til med salt, peber og engelsk sovs. Og server med spejlæg, hakket persille og rødbeder til.
