How To make Crusty Corn Flat Bread
1 c Brown rice flour +
-additional for dusting -loaves 1 1/2 ts Granulated yeast
2 Tesapoons sugar
1 1/2 c Warm water (110F)
1 c Corn flour
1/2 c Cornstarch
2 ts Xantham gum powder
1 To 1 1/2 teaspoons salt
2 lg Eggs, at room temperature
1 tb Corn oil
Here's a couple of off beat bread recipes I thought might interest you. This and the following recipe are wheat free breads. Combine 1/2 cup of the rice flour, the yeast, sugar and 1/2 cup of the warm water in a 2-cup glass measure; stir to combine, then let rest in a warm place until doubled in volume, about 10 minutes. Line a large baking sheet with parchment paper and draw two 8-inch circles on it. Combine remaining 1/2 cup rice flour, corn flour, cornstarch, xanthan gum powder and salt in a large bowl; mix to blend. Beat eggs lightly; set aside 1 tablespoon for brushing tops of loaves. Add remaining 1 cup warm water and the corn oil to beaten eggs. Using a wooden spoon, stir egg and yeast mixtures into flour and beat until smooth. Using a rubber spatula, spread soft dough into circles on marked parchment paper, heaping it up slightly in the center. Cover loaves lightly with greased plastic wrap and let rise until doubled in bulk, about 1 hour. Preheat oven to 425F. Beat a few drops of water into the reserved beaten egg and brush over loaves. Dust lightly with rice flour. Using a razor blade, slash tops of loaves into a large diamond grid pattern. (Use an up-and-down cutting motion rather than dragging the blade through the soft dough.) Bake for 20 minutes, until well browned. Makes two 8-inch diameter, 11-ounce loaves. PER SERVING (1/8 of a loaf): 90 calories, 3 g protein, 16 g carbohydrate, 2 g fat (0 g saturated), 26 mg cholesterol, 142 mg sodium, 1 g fiber. Learn how to make the best gluten-free bread! In this video we’re making an easy gluten-free sandwich bread recipe! It's also dairy-free! The recipe is super simple and uses basic ingredients! This bread can be sliced and enjoyed on its own, used in sandwiches and you can also freeze it. This is the fluffiest and tastiest gluten-free bread I have ever tasted and believe me I have tried many! Even my boyfriend who isn’t gluten-free loves this bread and always asks me to bake a new loaf!
Gluten-free breads in the grocery stores are quite expensive and often a bit dry! This bread is every coeliac’s and gluten intolerant’s dream! It’s so delicious and not dry at all and actually quite easy to make????
In this recipe I used all purpose gluten-free flour mix, which is basically a mix of rice flour, corn starch and potato flour☺️ Pretty much any kind of all purpose gluten-free flour mix should work well in this! If your flour mix already contains psyllium husk, you don’t need to add any psyllium to the dough. Same thing if you are using regular non gluten-free flour, no need to add psyllium, it’s only needed for gluten-free baking. The loaf pan I used was: 12 x 20 cm / 5 x 8 inch
Ingredients:
1 1/2 cups warm water (360 ml)
4 1/2 teaspoons of dry yeast (11 g)
1 tablespoon psyllium husk powder (if your flours don’t already contain it)
3 tablespoons maple syrup or honey
3 tablespoons olive oil
2 teaspoons salt
2 - 2 1/2 cups all purpose gluten-free flour mix (480 - 600 ml)
2 egg whites

1/4 cup olive oil (60ml) or canola oil, sunflower oil or melted butter
3 tbsps sugar (45g)
1 tsp salt (5g)
1 tbsp baking powder (15g)
2 and 1/2 cups all purpose flour (320g)
Note:
--This can be a vegan recipe. You can use any milk you like.
--You can use almond flour instead of all purpose flour for a low carb bread.
