How to Make Stuffed Peppers in the Slow Cooker ~ Crockpot Stuffed Peppers
INGREDIENTS:
4-5 medium sized bell peppers - capped and vein/seeds removed
1/2 to 3/4 cup grated cheddar cheese
2 cups marinara sauce
MEAT MIXTURE:
1 1/2 pounds of ground beef
1 cup cooked white rice
1/4 cup diced onion
1/4 cup grated colby jack cheese
1 egg
1/2 tsp. garlic powder
1/2 tsp. basil
1/2 tsp. oregano
1/4 tsp. salt
dash of black pepper
2 tbsp. marinara sauce
Cook on high for 3-4 hours or on low setting for 6-7 hours.
I cooked the peppers on high for 3 1/2 hours. It seems that every crock pot or slow cooker heat temperature is different so just check every so often for doneness and desired bell pepper tenderness.
We like it with a little firm exterior and soft interior.
Serve with rice, noodles, mashed potatoes or just a side salad and piece of garlic bread.
Enjoy

About thirty minutes before they’re finished cooking I sprinkle some shredded cheese over the top of each stuffed pepper. This results in an extra cheesy dinner that will please any cheese lover.
There are quite a few choices of liquid that you can use to cook these bell peppers in. For example, in the video, I use marinara sauce, but you can easily use something like a beef broth.
These peppers will feed four to six people. With that said, if you’re cooking for quite a few, then I recommend also cooking up some sides to go with these. A single stuffed bell pepper might not be enough for some people.
Below is the full list of ingredients that I made use of for these tasty slow cooker stuffed peppers. This list will be pretty handy if you need to go the shops.
6 Bell Peppers
Beef Mixture
500g (17.5 oz.) ground beef, lean
1 onion, finely diced
2 tsp. garlic, crushed
2 Tbsp. Worcestershire sauce
2 Tbsp. tomato paste
2 tsp. parsley
1 tsp. oregano
½ cup cheddar cheese, shredded
1 cup cooked rice
1 tsp. salt
¼ tsp. pepper
Sauce
½ cup beef stock or 425g (15 oz.) pasta or marinara sauce
You can change the ingredients in the beef mixture quite easily. It’s perfect if you prefer specific flavors such as mustard, or chives rather than tomato and parsley. You can also leave the rice out and use something like almond flour instead. Changing the recipe will radically alter the flavor and might increase or decrease the cooking time.
I hope that the video above has helped you through the process of making some slow cooker stuffed peppers. If you have any feedback, tips or anything else that you would like to say, then please don’t hesitate to leave a comment below or over at slowcookingperfected.com
