Recipe:
5 lbs. pork butt (shoulder) cut into cubes
2 lbs. (2 Jars) Crushed Tomatillos (use 1lbs if you want a thicker chili)
1 cans (12oz) Pickled Sliced Jalapenos (like from Taquerias).
1 bunch cilantro
1 large onion chopped
3 jalapenos sliced
4 limes (juiced)
2 tablespoons garlic salt
1 teaspoon oregano.
In a blender, blend the cilantro tops and the pickled sliced jalapenos with the vinegar juice together as the base for the chili verde. Place all ingredients in crock-pot, turn on medium/high heat for 8hrs, use lower heat if you want to cook it overnight (12+ hrs)
Serve as stew with rice and beans, or strain out meat for a nice and sloppy taco or burrito. Enjoy!

Hey Chile-Heads! In honor of green chile season, I'm sharing with you a simple version of a classic New Mexican favorite: Poor Man's Green Chile Stew. This stew has a few simple ingredients and comes together so easily! It's the perfect stew to warm you up in this fall weather. Poor Man's Green Chile Stew
Ingredients:
5 medium red potatoes, chopped into 1 in. pieces
1 lb ground beef
3 tbsp flour (you can use a cornstarch slurry instead, if you’d like)
5 cups water, or beef broth
1 cup chopped green chile
1 tsp kosher salt
1 garlic clove, minced or pressed
Directions:
Peel and chop 5 medium red potatoes and set aside. Cook 1 lb ground beef in a large saucepan until completely browned. Add 3 tbsp flour and cook for another minute. Next add the potatoes. Cook until everything is combined. Now add 5 cups of water/broth and 1 cup chopped green chile. Bring up to a boil. Once boiling, add 1 tsp kosher salt and 1 garlic clove. Mix and turn the heat to low so the stew can cook at a low boil. After about 20 minutes, or until the potatoes are soft, the stew is ready. Enjoy!

This green chili stew recipe is a delicious green chile sauce with pork shoulder cooked low and slow until perfect. So easy!

THINGS YOU’LL NEED:
2 pounds green chili peppers of choice I used a variety – see the discussion above
2 tablespoons olive oil + more as needed
1 1/2 pounds pork shoulder cut into bite sized pieces (chuck roast is good, too)
2 tablespoons chili powder
1 tablespoon paprika
1 teaspoon cumin
Salt and pepper to taste
1 medium onion chopped
4 cloves garlic chopped
6 cups chicken broth beef broth is good, too
1 pound yellow potatoes cut into small cubes
2 medium carrots peeled and cut into small cubes
1/4 chopped cilantro or to taste (+ more for garnish)

Authentic Hatch Valley New Mexican Green Chile Stew | One-hour Instant Pot Recipe
Looking for the best green chile stew? You've found it. Forget what you know about gloopy, over-salted stew. This is the real stuff.
The recipe:

Prep Time: 15-minutes
Cook Time: 45-minutes in an Instant Pot (
Yield: Stew for 4 with seconds for 2 (be quick!)
Ingredients
1 ½ - 2 lbs cubed, beef stew meat (chuck or other kind of roast)
1 onion
1 head of garlic
4 green chile pods
4-6 red potatoes
32-oz chicken stock
2 cups stewed tomatoes
This two-stage recipe has been in my family for generations (oh, yes, you can bet our son will learn this one before high school), is super easy, and one pot. This green chile stew will keep your kitchen clean and your taste buds singing for joy.
Don't you dare use chile that isn't from New Mexico, and don't you dare put everything in at the same time. Use your pressure cooker, it's a super versatile tool.
Remember, the key to making the best green chile stew at home is to have all your ingredients prepped, washed, and ready to go before you start cooking.

Traditional New Mexican stew has pork in it, but, because I found it on sale, I'm using beef roast. Honestly, it's good either way, because the meat will be under pressure for 30-minutes and turn into buttery, spicy, deliciousness. This is the best green chile stew recipe. Change my mind. JK don't change my mind. I want to change yours.
