Beer is a must-have when celebrating St. Patrick's Day. If you're not a fan of drinking beer but still want to join the tradition, this Crockpot Irish Beef Stew is for you! Tender beef slow-cooked with bacon and vegetables in a mix made with stout beer, beef broth, Worcestershire sauce, herbs and spices. The beer adds sweetness to the delicious and flavor-packed dish.

Ingredient
4 oz bacon, diced
1 lb braising beef cut of your choice, preferably chuck, brisket, or eye of the round, cut into 1-inch cubes
1½ tbsp all-purpose flour
1 medium-large yellow onion, roughly 4 oz, roughly diced
3 cloves garlic, minced
2 medium firm waxy potatoes, preferably Yukon Gold’s & roughly 12½ oz total, cut in ½-inch pieces
1 large carrot, roughly 3 oz, chopped in 1/2 inch pieces
2 ribs celery, roughly 4 oz, chopped in 1/2 inch pieces
1-16 oz bottle stout beer, preferably Guinness
1 cup strong beef broth
2 tbsp Worcestershire sauce
¼ cup tomato paste
1 tsp dried thyme
1 tsp dried rosemary
1½ tsp salt
¼ tsp freshly ground black pepper
2 bay leaves
salt and pepper to taste

0:09 Season the beef cubes in salt and pepper.
0:26 Toss the beef with flour to coat the pieces. Set aside.
0:34 Fry the bacon in a deep skillet or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
0:50 Add enough olive oil to the pan. Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides.
1:09 Transfer the beef to a plate and repeat until all the beef is browned.
1:16 Add the onions and fry them, adding more oil if necessary, until lightly browned about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes.
1:46 Add tomato paste, all the spices, and Worcestershire sauce. Roast briefly
2:05 Deglaze the pot with stout beer and reduce briefly.
2:14 Add the stock, and return the beef and bacon to the pot along with the remaining ingredients and stir to combine.
2:33 Transfer everything to a slow cooker and then cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
2:50 Adjust taste accordingly with salt and pepper. Discard any whole spices.
3:11 Serve with some crusty country bread or Irish soda bread. This soup is even better the next day.

If you're looking for a delicious bowl of a heartwarming Irish Stew, look no further. This stick-to-your ribs lamb stew is a winner in my home year-round. Fun fact about me - I'm a dual citizen of Ireland with my parents being from both the North and South of Ireland with relatives all over the country. When we had our first family trip to Ireland, the first place we visited was the Guinness Factory and what an amazing treat that was!! Opened in 1759, the Guinness Factor was a 1/2 day experience for us. We watched how they made the beer, taste tested various drafts, learned the history, and ate the Guinness Stew they served in the cafeteria. Can I just tell you HOW AMAZING it tasted? I had never had a stew that delicious in my life and it was at that moment that I told myself that I needed to perfect a Guinness Irish Stew for my family - and so I did!

2 Tablespoons (30 ml) Worcestershire sauce (or soy sauce)
1 teaspoon (5 ml) dried herbs (thyme, oregano, basil)
1 Tablespoon (15 ml) sugar
1 teaspoon (5 ml) salt , or to taste
1/2 teaspoon (2.5 ml) black pepper
3 Tablespoons (45 ml) corn starch
3 Tablespoons (45 ml) water

Slow Cooker Irish Stew
Looking for a healthy dinner idea? This is a tasty classic stew based on simple and cheap ingredients.
Recipe taken from The Slow Cooker Cook Book developed by Mid Ulster District Council, Public Health Agency, Health and Social Care, and the Northern Healthy Lifestyles Partnership.
Preparation Time: 10-15 minutes
Time in slow cooker: 8-10 hours on LOW / 4-6 hours on HIGH
Serves 6
500g lamb stewing steak, minced meat or beef
3 small onions
4 medium carrots
2 reduced salt beef or lamb stock cubes
6 medium potatoes
3 cups of boiling water
Method:
1. Preheat your slow cooker on HIGH.
2. Add meat to the slow cooker.
3. Wash, peel and cut your vegetables into small pieces
4. Wash, peel and cut the potatoes into 4 pieces
5. Add stock cubes dissolved in boiling water
6. Place lid on slow cooker and leave to cook, when finished check
for seasoning and add any flavourings that you like.
