How To make Crockpot Irish Stew

lamb, boneless, cubed, browned & drained

bay leaf

carrots, pared, cut in 1/2 inch slices

each
onions, thinly sliced
4
each
potatoes, pared & quartered
1/4
cup
quick-cooking tapioca (optional)

peas or mixed vegetables, frozen
Directions:
Season cubed lamb with salt and pepper. Add remaining ingredients except peas (omit tapioca if you don't want gravy thickened). Stir well. Cover and cook on Low 10-12 hours. Add peas during last 1-2 hours of cooking.

An Amazing Slow Cooker Beef & Guinness Stew
This is our Slow Cooker Beef and Guinness stew, similar to the stew ( we did a few weeks ago, but with a softer flavour. The Guinness compliments the beef nicely.
We used bottled Guinness here, but you can also use a can, or even better, from a draft tap, Either way it makes a beautiful sauce.

Slow Cooker Irish Stew
Looking for a healthy dinner idea? This is a tasty classic stew based on simple and cheap ingredients.
Recipe taken from The Slow Cooker Cook Book developed by Mid Ulster District Council, Public Health Agency, Health and Social Care, and the Northern Healthy Lifestyles Partnership.
Preparation Time: 10-15 minutes
Time in slow cooker: 8-10 hours on LOW / 4-6 hours on HIGH
Serves 6
500g lamb stewing steak, minced meat or beef
3 small onions
4 medium carrots
2 reduced salt beef or lamb stock cubes
6 medium potatoes
3 cups of boiling water
Method:
1. Preheat your slow cooker on HIGH.
2. Add meat to the slow cooker.
3. Wash, peel and cut your vegetables into small pieces
4. Wash, peel and cut the potatoes into 4 pieces
5. Add stock cubes dissolved in boiling water
6. Place lid on slow cooker and leave to cook, when finished check
for seasoning and add any flavourings that you like.
