How To make Crisp Split Peas
1 c Yellow split peas
2 ts Baking soda
Vegetable oil -- for deep-frying 1/2 ts Chili powder
1/2 ts Ground coriander
1 pn Ground cinnamon
1 pn Ground cloves
1 ts Salt
Rinse and sort the peas, then place in a large bowl and add enough cold water to cover. Stir in baking soda. Let soak overnight. Drain peas, rinse several times in cold water and drain thoroughly. Let stand at least 30 minutes, then spread out on paper towels and let dry thoroughly. In a deep, heavy saucepan, heat about 2 inches of oil to 350 F (180 C) or until a 1-inch bread cube turns golden brown in about 65 seconds. Add peas, a portion at a time, and cook until golden. (Be careful when cooking peas; even when completely dry, they often cause oil to bubble to top of pan.) Remove peas from hot oil with a slotted spoon and drain on paper towels. Turn cooked peas into a small bowl. Sprinkle with chili powder, coriander, cinnamon, cloves and salt; mix to coat peas with spice mixture. Cool completely; store in an airtight container until ready to serve. Makes about 1-3/4 cups. Here is the recipe of hearty, aromatic and very tasty pea stew with fried onion, carrot, bacon and spices.

✅ Ingredients:
• split peas – 14 oz | 400 g
• smoked bacon – 7 oz | 200 g
• onion – 3 oz | 100 g
• carrot – 2,5 oz | 70 g
• garlic – 2 cloves
• dried thyme – ½ tsp
• smoked paprika – 1 tsp
• ground nutmeg – ¼ tsp
• salt – to taste
• ground black pepper – to taste
• water – 5 cup | 1,2 L

• cutting board
• stockpot or saucepan
???? Preparation:
1. Rinse the peas well, pour with water and leave for half an hour.
2. Cut the bacon into small pieces, chop the onion, grate the carrot.
3. In a saucepan fry the bacon until golden for about 2 minutes over medium heat stirring occasionally.
4. Add the onion, stir and fry for another minute over medium heat.
5. Add the carrot, stir, add the minced garlic, ground black pepper to taste, dried thyme, paprika and ground nutmeg, stir.
6. Drain the soaked peas and add into the saucepan. Pour with 5 cup | 1,2 L of water, stir, bring to a boil, cover with a lid and cook for an hour over low heat stirring occasionally.
7. Salt to taste and take off the stove.
8. Serve the pea porridge with bacon hot having decorated with greens and fried bacon lumps.

YELLOW SPLIT PEA WITH ZUCCHINI / Yellow split peas recipe
Yellow Split Pea with Zucchini is a delicious Indian vegan and vegetarian curry. It’s easy to make, flavorful as well as high protein, which makes it a nutritious vegan dinner recipe. It is gluten-free, nut-free and soy-free.
What is Yellow Split Pea?
Yellow Split pea are field peas that are dried and their dull-colored outer skin is peeled and split in half by hand or machine at their natural split. They are high in protein and fiber and low in fat. This is what makes them highly nutritious and healthy meal options. Yellow Split Peas have a more earthy flavor in them. They make great curries and soup recipes.
Step By Step Procedure:
Cook yellow split peas al dente.
Heat oil and sauté mustard seeds and cumin seeds. Add onions and fry until translucent.
Add garlic paste, tomato, and all spices. Cover and cook for 5 minutes.
Once soft, add zucchini and water. Cover and cook until soft.
Next, add cooked split pea and let it simmer on low heat for 5 more minutes.
Garnish with coriander leaves. Serve, with rice or naan.

Crispy Indian Yellow Split Peas Fritters
Ingredients:
2 cups Yellow Split Peas
1 bunch fresh coriander (chopped)
1 bunch fresh spinach (chopped)
1/2 a red onion (sliced )
4 loved of garlic (diced)
1 tspn turmeric powder
1 tspn cumin seeds
1/2 tspn sea salt
2 red chillies (optional )
Method:
Drain off your soaked peas and add to a blender or food processor. Blend until grainy consistency. In a mixing bowl add your blended peas and the other remaining ingredients. Mix well until all are incorporated to form a grainy paste. With a tablespoon scoop out a mix onto your hands and mould to flat mini patties. Heat up your oil in a pan to medium heat, then gently fold in each patty and cook both sides until brown in colour. Remove from pan and place on kitchen paper to drain off any excess oil. Serve with your chosen dips preferably tamarind or brown sauce.
