The Southern Living Test Kitchen has perfected the art of the casserole. We’ve published dozens and dozens of these crowd-pleasing one-dish wonders over the years, but there are always “keepers” that stand the test of time so much that our Test Kitchen cooks make them at home, on their off-days. In the November 1992 issue of Southern Living, we featured a recipe for Creamy Ham-and-Chicken Medley by Test Kitchen professional Jane Cairns. Made with leftover cooked chicken and ham in an indulgent Parmesan cream sauce, this easy casserole is simply delicious and can be served in so many ways.

1 tablespoon butter or margarine; 1/2 cup sliced fresh mushrooms; 1/3 cup butter or margarine; 1/3 cup all-purpose flour; 2 1/2 to 3 cups milk, divided; 1 cup whipping cream; 1 cup freshly grated Parmesan cheese; 1/2 teaspoon salt; 1/4 teaspoon freshly ground black pepper; 1/4 teaspoon ground nutmeg; Dash of ground red pepper; 2 cups chopped cooked chicken; 2 cups chopped cooked ham; 2 (10-ounce) packages commercial frozen puff pastry shells, baked; Paprika

Creamy Mustard Sauce That Goes Well With Everything!
This Delicious, Creamy Dijon mustard Sauce is perfect for everything, beef, pork, fish, chicken, pasta dishes, you name it!
Nonstick pan with lid:
Recipe:
- 1 small onion, finely chopped
- 3 slices of bacon, cut in small pieces
- Half a cup/120ml chicken stock
- 1,6 Cup/400ml heavy cream
- 3-4 full teaspoons Dijon mustard
- 1 clove of garlic
- 1 tablespoon fresh thyme
- Salt and pepper for seasoning

Ingredients
4 tablespoons butter ½ stick
½ medium onion chopped
2-3 cloves garlic minced
4 tablespoon AP flour
2 cups low sodium chicken or vegetable stock
1 tsp kosher salt
½ tsp black pepper
¼ tsp or ground nutmeg, optional
3 cups broccoli florets or 1 large head, cut into small pieces
1 large carrot grated, julienned or finely chopped
2 cups half & half or milk or light or heavy cream
8 oz block grated cheddar cheese or 2 cups (mild, medium, or sharp )
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and cook 3-4 minutes or until softened and light gold. Add the garlic and saute for another minute.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock, broccoli florets, carrots, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in half & half and cheddar cheese and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired.
