Bacon Chicken Roll-Ups

Mix 8oz of cream cheese softened with 3-4 tbsp of your favourite fresh herbs (dried is okay too)
Set aside.
Pound 4-6 boneless chicken breasts flat between sheets of plastic wrap until they are about 1/4 thick. (this is easier than it sounds, trust me)
Spread cheese mixture on one side of chicken breast and roll it up (short side first). Wrap pieces of chicken with two strips of bacon.
The original recipe says to slightly cook bacon until cooked not crisp and then wrap the chicken with it, securing with toothpicks. The advantage to this is less bacon fat getting on/in the chicken.
If you put the bacon on raw, it stays on very well and as it cooks it shrinks squeezing the chicken roll and keeping it together. You can put the rolls under the broiler for a couple of minutes to crisp up the bacon and brown it a bit. The bacon fat ends up in the bottom of the pan and you can blot the chicken before serving it to get rid of most of it anyway.
Place the chicken rolls in a greased baking dish and bake uncovered at 350F for 35-45 minutes until the internal temp reaches 180F. (Safe chicken eatin' temperature)

Ingredients:
------- Prepare Dough: 00:14 -------------
-Pakola Full Cream Milk warm 1/3 Cup
-Water warm 1/3 Cup
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 2 & ½ tsp
-Anda (Egg) 1
-Maida (All-purpose flour) 1 & ½ Cup
-Namak (Salt) ½ tsp or to taste
-Maida (All-purpose flour) 1 Cup
-Olive oil 1 & ½ tbs
-Olive oil 1 tbs
-Olive oil 1 tbs
------- Prepare Chicken Filling: 01:32 -----------
-Makhan (Butter) 2 tbs
-Cooking oil 1 tbs
-Lehsan (Garlic) chopped 2 tbs
-Hara pyaz (Green onion) white part chopped 3 tbs
-Maida (All-purpose flour) 2 tbs
-Pakola Full Cream Milk warm 1/3 Cup
-Chicken stock cube 1
-Kali mirch (Black pepper) crushed ½ tsp
-Namak (Salt) ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 2 tsp or to taste
-All spices ½ tsp
-Boneless chicken 400g (boiled with soy sauce & vinegar then shredded)
-Hara pyaz (Green onion) leaves chopped ¼ Cup
-Fresh parsley chopped 2 tbs
-Tomato ketchup 1-2 tbs
-Cheddar cheese grated
-Mozzarella cheese grated
-Makhan (Butter) melted 3 tbs
-Dried parsley 1 tsp
-Lehsan powder (Garlic powder) ½ tsp
-Anda (Egg) whisked 1
-Safed til (Sesame seeds)
Directions:
Prepare Dough: 00:14
-In a bowl,add milk,water,caster sugar,instant yeast & whisk well,cover & let it rest for 10 minutes.
-Add egg,all-purpose flour,salt & whisk well for 4-5 minutes.
-Add all-purpose flour & knead until soft dough is formed.
-Add olive oil and knead until dough is smooth.
-Transfer dough on clean working surface,add olive oil,stretch & knead dough well for 5-6 minutes.
-Grease with olive oil,cover & let it proof for 1 hour or until double in size.
Prepare Chicken Filling: 01:32
-In a wok,add butter,cooking oil & let it melt.
-Add garlic & sauté for a minute.
-Add green onion white part & mix well.
-Add all-purpose flour,mix well & cook for 1-2 minutes.
-Add milk & whisk continuously.
-Add chicken stock cube,black pepper crushed,salt,red chilli powder and all spices,whisk well & cook until sauce thickens (1-2 minutes).
-Add boiled & shredded chicken & mix well.
-Add green onion leaves,fresh parsley and mix well.
-Let it cool.
-Knead dough again until smooth,sprinkle dry flour & divide in 8 portions (each dough ball is 75g).
-Take one portion and sprinkle dry flour,make a ball and roll out with the help of rolling pin.
-Add & spread tomato ketchup,add prepared chicken filling,cheddar cheese & mozzarella cheese.
-Now turn the sides and roll up,pinch & seal the ends (makes 8).
-In a small bowl,add melted butter,dried parlsey,garlic powder and mix well.Herbed butter is ready!
-Grease 7.5 x 11” baking pan with prepared herbed butter,place dinner rolls and cover & let it proof for 20-25 minutes.
-Apply egg wash with the help of brush & sprinkle sesame seeds.
-Bake in preheated oven at 170C for 25 minutes.
-Take out from oven & apply herbed butter on top,cover & let it rest for 10 minutes.
-Serve with tea & tomato ketchup!
Million Dollar Tortilla Roll Ups
Whatever the reason....These Almond Bacon Cheddar Tortilla Roll Ups taste like a million bucks.
Buffalo Chicken Pinwheels - Quick & Easy Recipe!
Ingredients
• 8 ounces cream cheese, softened
• ½ cup hot wing sauce
• ¼ cup blue cheese, crumbled (I ended up excluding the blue cheese and adding a little more of the Colby cheese)
• 1 cup colby-jack cheese, shredded (4 ounces)
• ¼ cup green onions, finely chopped
• 1 pound chicken breast, cooked and shredded
• 5 large flour tortillas (approximately 10½ diameter)
Instructions
1. In a bowl, beat cream cheese on low and add in sauce, blue cheese, colby-jack cheese, and green onions. Beat until blended.
2. Stir shredded chicken into mixture by hand.
3. Spread approximately ½ - ¾ cup of mixture on top of one of the tortillas. Roll up tortilla tightly, but without shifting the mixture too much. Repeat with remaining tortillas. Place rolled tortillas on a place and cover with plastic wrap. Refrigerate for 2-4 hours.
4. Remove from refrigerator and unwrap. Slice each rolled tortillas in half and then each half into 3 slices, discarding ends (or eat them!). Place pinwheel slices on serving plate or tray.
Notes
--Smaller or larger tortillas may be used, however you will need to adjust the amount of buffalo chicken mixture you add to each tortilla.
These buffalo chicken pinwheels turned out great! I personally couldn't stop eating them.
Chicken Alfredo Roll Ups
Here is what you'll need!
Servings: 1
INGREDIENTS
8 lasagne noodles
2 cups cooked, shredded chicken
1 lb bacon, cooked and crumbled
8 oz shredded mozzarella
Garlic Alfredo Sauce
1 Tsp garlic powder
½ tsp garlic, minced
2 cups heavy whipping cream
Pepper
Salt
Pepper
1 cup grated parmesan cheese
½ cup butter
Instructions
1.Preheat oven to 350ºF/ 175ºC
2.Cook the lasagna noodles until al dente, drain and rinse the noodles with cold water then lay the on a paper towel to remove excess water.
3.In a medium saucepan add butter, heavy whipping cream, and cream cheese, cook over medium heat and whisk until melted.
4.Add minced garlic, garlic powder, salt and pepper, whisk until smooth
5.Add the parmesan cheese and bring to a simmer, continue to cook for about 3-5 minutes or until it starts to thicken
6.Pour 1 cup of the alfredo sauce in a 9x13 inch pan
7.Add bacon and chicken to the alfredo sauce, mix together
8.Spread about 2 tbsp. of alfredo sauce mixture over each noodle.
9.Roll each noodle and place seam down in 9x13 pan.
10.Once they are all in the pan pour remaining alfredo mixture over the top and sprinkle mozzarella cheese over the top.
11.Cook for about 30 minutes until it is heated through and cheese bubbles and browns
12.Enjoy!
