For the brownie:
200g caster sugar -
110g butter, softened

Fudgy Mint Brownies
Brownie
½ cup Butter, softened
1 cup Granulated Sugar
4 Eggs
2 cups (16 oz) Hershey’s Chocolate Syrup
1 tsp Vanilla
½ tsp Salt
1 cup Flour
½ cup Walnuts, chopped *Optional*
Frosting
½ cup Butter, softened
2 cups Powdered Sugar
2-4 Tbsp Crème De Menthe
¼ - ½ tsp Mint or Peppermint Extract *Optional*
Chocolate Ganache
1 cup Chocolate Chips
6 Tbsp Butter
Directions
1. Preheat oven to 350°F
2. In large bowl, cream together butter and granulated sugar, mixing until light and fluffy. A stand mixer or handheld mixer will make this easier.
3. Add in eggs, mixing in 1 egg at a time. Once eggs are blend in, add Hershey syrup, vanilla, and salt.
4. Lastly, mix in flour and walnuts. Blend slowly at first so flour doesn’t fly everywhere.
5. Line a 9”x13” pan with parchment paper or tin foil and lightly grease with oil. Pour brownie batter into pan and spread evenly.
6. Bake brownies for 25-30 minutes. Let cool to room temperature once done baking.
7. While brownies finish cooling, make mint frosting: blend together butter and powdered sugar in a medium sized bowl until light and fluffy, about 2-3 minutes. Next, blend in crème de menthe and mint extract (if using). Can add a few drops of green food coloring if wanting a bold green colored frosting.
8. Spread frosting in an even layer onto cooled brownies. Cover with plastic wrap or tin foil and refrigerate for 30 minutes.
9. While brownies chill, make chocolate ganache: In a small to medium sized microwave safe bowl, combine chocolate chips and butter. Microwave for 30 seconds to 1 minute, stirring occasionally to ensure chocolate and butter melts. Stir until chocolate and butter have fully combined and melted.
10. Cool chocolate until just barely warm, room temperature preferred. You can let the chocolate sit until it reaches room temperature or can use an ice bath to quickly cool chocolate. For ice bath, use a bowl slightly larger than the one you used for the chocolate and add ice and cold water to it. Hold chocolate bowl over the ice bath bowl, submerging just the bottom of the bowl. Stir chocolate constantly while holding bowl over ice bath. This will quickly cool the chocolate.
11. Pour chocolate over chilled brownies. Chocolate should be just barely warm, that way it doesn’t melt your frosting. Spread chocolate into an even layer. Cover and chill in refrigerator for another 30 minutes.
12. Once chocolate has set and slightly hardened, lift brownies out of pan and slice to serve. I got 32 pieces out of this 9”x13” pan.
13. Store in airtight container in refrigerator. Enjoy!

Grasshopper Brownie Bar ingredients... There are three layers. For the brownie layer, you'll need: 1-1/4 cups semi-sweet chocolate (250g), 3/4 cup butter, 3 large eggs + 1 egg yolk, 1 tsp vanilla, 1/2 cup all-purpose flour, 1/3 cup cocoa powder, 1/2 tsp baking powder, 1 cup brown sugar, pinch salt. For the peppermint frosting layer, you'll need 2 cups powdered sugar (sifted), 1/4 cup soft butter, 4oz (half block) cream cheese, 1-2 Tbsp whipping cream, 1/2-1 tsp mint extract, 2-3 drops green food colouring, and [optional] 2-3 Tbsp creme-de-menthe. For the optional decorative ganache, you'll need: chopped chocolate and heavy cream, plus mini chocolate chips and After Eight mint thins.
