Béarnaise Sauce
Bearnaise Sauce is one of the 5 French mother sauces, and is considered by many to be one of the most magnificent sauces for steaks. Notoriously difficult to make by hand, this recipe uses an easy method that yields exactly the same result in 2 minutes flat!

Chef Justin Pfeilsticker is not a small man and that means his bread pudding is probably better than yours. To be totally honest, his was the best bread pudding weve ever had. It capped off a summer of cooking at Sanctuary on Camelbacks Lunch and Learn series this past Saturday night.
For the past couple months, Sanctuarys been hosting chefs from both local and out-of-town restaurants for cooking classes and lunch or dinner parties, all emceed by none other than Boston Beau himself.
After a cooking demo on how to make crabmeat ravigote and the devouring of a killer corn-fried catfish with crawfish etouffee, we headed into the kitchen to chat with Pfeilsticker (whos the man behind the burners at Trader Vics) and watch the kids move bread pudding on down the line.
One thing we learned: we need a camera with a stabilizer. Bad.

Saint John is located in the New Orleans French Quarter at 1117 Decatur Street. Saint John is a brand new restaurant which opened up in the French Quarter in September of 2021. Saint John has been getting great restaurant reviews which has quickly made it popular with tourists and locals who love their New Orleans French Quarter Creole food. This is my first visit to Saint John and I’m meeting a group of other NOLA gents for a fun lunch today so join us for some good times, good food and good people.

Ruffino's : How to Cook Crab Beignets
Learn how to make Ruffino's delicious Crab Beignets from Chef Gino Sclafani.
2 large eggs
1 pound fresh Louisiana crab
1 Tablespoon Creole Seasoning
1/4 cup red bell peppers, diced
· 1/4 cup green onions, sliced
1 Tablespoon Italian parsley, chopped
1 Tablespoon garlic, minced
1 teaspoon fine sea salt
1 1/2 cups all-purpose flour
1 teaspoon baking powder
½ cup Abita Amber beer
2 Tablespoons Creole Seasoning
Preheat the fryer to 350° F.
In a large bowl whisk the eggs until frothy. Add the crab to the eggs and season with creole seasoning. Stir in the bell peppers, green onions, parsley, garlic, salt, flour, baking powder, and milk, and stir until it has the consistency of wet dough.
When the oil is hot, drop large spoonfuls of beignet batter and fry until golden brown and crispy, for about 3 minutes. Do this in batches to avoid overcrowding. Drain the beignets on paper towels. Season with some Creole seasoning. Serve with Remoulade Sauce for dipping.
