How To make Crab and Shrimp Au Gratin
4 tb All-purpose flour
1/2 ts Pepper
1/3 c Process cheese spread
1 c Cheddar cheese, shredded
1/2 ts Salt
2 c Milk
1/8 ts Tabasco sauce (or more)
1/4 lb Crabmeat
1/2 lb Cooked shrimp
Hot cooked rice Combine flour, salt, pepper and 1 cup milk. Stir until smooth. Combine cheese spread and remaining milk in top of double boiler, cook over hot water until cheese melts. Add flour mixture and hot sauce to cheese mixture, stir until smooth. Add shrimp and crabmeat. Pour into a greased 1 1/2 qt. casserole dish and top with shredded cheese. Bake at 350 F. for

Ingredients
4 oz deviled crab (see deviled crab video)
4 oz 10-20 dry scallops (muscle removed)
3/4 oz dry white wine
1 Tbs melted butter
2 Tbs shredded Gruyere Cheese

Crab Au Gratin
This is a classic Louisiana dish always found in the best restaurants! It's surprisingly simple to make at home and a great dish for a dinner party.

1-1/2 cup heavy cream or milk
1/4 cup butter
1/4 cups flour
1 cup Parmesan cheese
1 pound lump crab meat
1/2-pound fresh shrimp
Zest of 1 lemon
2tsp Cajun seasoning
2tsp fresh parsley
Instructions
Preheat oven to 350°. Add butter to oven safe pan. Sautee shrimp and cajun seasoning about a minute. Remove shrimp add flour and cook until honey-colored. Slowly add heavy cream to mixture until it thickens. Add crab meat, parmesan cheese, shrimp, parsley, and lemon zest and mix well. Pour 1/2 cup of heavy cream on top, add parmesan cheese. Bake for 15 to 25 minutes until bubbly and top is golden brown.
