How To make Crab Stuffed Chicken Breasts
6 Chicken breasts
1/2 c Onion, chopped
1/2 c Celery, chopped
3 T Butter
3 T White wine, dry
7 1/2 oz Crabmeat, flaked
1/2 c Herb stuffing mix
2 T All-purpose flour
1/2 t Paprika
1 pk Hollandaise sauce mix
3/4 c Milk
2 T White wine, dry
1/2 c Swiss cheese, shredded
Salt Pepper Skin & bone chicken breasts; pound to flatten. Sprinkle with a little salt and pepper. Cook onion and celery in 3T butter until tender. Remove from heat; add 3T wine, the crab and stuffing mix, and toss. Divide mixture among breasts. Roll up and secure. Combine flour, paprika. Coat chicken. Place in 11" X 7" X 2" baking dish , drizzle with 2T melted butter. Bake uncovered in 375 degree oven for 1 hour. Transfer to platter. Blend hollandaise sauce mix, milk. Cook, stirring, until thick. Add remaining wine and cheese. Stir until cheese melts. Serve over chicken. Mrs. Robert F. Lewis

Boneless Skinless Chicken Breasts (2-4)
6 oz andouille sausage
1 stalk celery (diced)
1/2 jalapeno (diced)
1/2 bell pepper (diced)
1/2 yellow onion (diced)
1 tsp garlic paste or minced garlic
1 tbsp avocado oil
8 oz cream cheese
1/4 cup sour cream
1/4 cup shredded mozzarella
1/4 cup shredded parmesan
cajun seasoning
all purpose seasoning
chile powder and smoked paprika
Brussel Sprouts:
1 lb brussel sprouts
2 tbsps butter
4-5 slices bacon
all purpose seasoning
1 packet sazon
Directions:
Preheat oven to 400 degrees. Prep/Dice your veggies. Start on the stuffing by heating a skillet over medium heat with a touch of oil. Add Andouille sausage and brown evenly. Add peppers and onion and cook for 3-4 minutes or until softened. In a mixing bowl, add room temperature cream cheese and then pour the sausage and veggies into the mixing bowl and combine. Add sour cream and shredded cheese. Add garlic, mix to combine and then season to taste. Place stuffing in the fridge for 20 minutes.
Prep your chicken breast by seasoning and then slicing the side and forming a pocket. Using a spoon, stuff the chicken breast . Heat a skillet over medium high and sear the chicken on both sides - 60-90 seconds per side or until browned evenly. Baste with butter (optional). Place in a 400 degree oven for 12-15 minutes or until the chicken reaches 165 degrees internal temp.
