How To make N.Yr.Eve Feast 2. Stuffed Chicken Breasts W
3/4 c Swiss cheese; shredded
1/2 c Ricotta cheese
1 tb Thyme; fresh
1/8 ts Cracked black pepper
6 ea Chicken breasts
2 ts Butter
3/4 lb Tomato fettuccine; fresh
1/3 c Brandy
1 c Chicken broth
2 tb Tomato paste
2 tb Chives; chopped
Stuffed chicken breasts, oozing with cheese, are placed atop swirls of pasta. Note: if desired, use 1/2 lb dried pasta instead of fresh. If not using brandy, increase chicken broth to 1 1/3 cup. Use boneless, skinless c1;0chicken breasts.
In small bowl, fold together Swiss and ricotta cheeses, thyme and cracked black pepper. Place a chicken breast on flat surface. Cut a 2-1/2 inch horizontal slit into side of chicken breast to form a pocket. Repeat procedure with remaining breasts. Stuff each pocket with 2 tbsp cheese mixture. Season with salt and pepper to taste. Bring water to boil for pasta. In medium skillet over medium-high heat, melt butter. (If using dried pasta, add to boiling water now and cook until tender.) Add chicken to skillet and cook 6 minutes. (If using fresh pasta, add to boiling water now.) Turn; reduce heat to medium and cook 4-5 minutes until chicken is cooked through. Drain fettuccine well and place on large serving platter. Place chicken on top. Remove skillet from heat, add brandy, chicken broth, tomato paste and chives. Place skillet over high heat; boil 2 minutes. Spoon sauce over fettuccine. -----

Chicken Dilkush Kebab Ingredients
150 gms Chicken Breast Fillet (boneless)
3 tbsp Cream
½ tsp Garlic Paste
½ tsp Ginger Paste

WHOLE CHICKEN HAMONADO (Sarap to the bones!) (Whole Chicken Fry in Filipino Style)
Chicken Hamonado is a Filipino dish made by cooking a whole chicken with pineapple juice, soy source, black pepper, bay leaf , searing, brown sugar, oyster sauce, pineapple chunks, minced onion, minced garlic and salt. Chicken Hamonado or chicken in pineapple sauce, is very easy to make and scrumptious. The best part of this recipe is you don’t have to cook this in oven. You just need a deep wok or pan with lid ( a little bit of patience) and it’s good to go! #chickenhamonado #filipinorecipe

INGREDIENTS:
✔️1 kilo whole chicken
✔️2 cups pineapple juice (unsweetened)
✔️3 tablespoon soy sauce
✔️1/2 teaspoon black pepper
✔️1 large onion (chopped)
✔️4 cloves garlic (minced)
✔️2 tablespoon oyster sauce
✔️1 tablespoon brown sugar
✔️salt to taste
✔️5 to 6 pineapple slices (or chunks)
✔️oil for searing
PROCEDURE
1. Combine pineapple juice, soy sauce and black pepper. Mix well. Pour over the chicken. Add bay leaf. Marinate for at least 6 hours or overnight.
2. After marinating, drain from the marinade. Then sear all sides of the chicken until brown. Heat 2 tbsp. oil in pan and sear the chicken. Turn to cook each side. After browning, set aside.
3. In the same pan, saute’ onion and garlic. then put back the chicken. Add the reserved marinade. Add oyster sauce and brown sugar. Simmer for 15 minutes in low heat.
4. After 15 minutes, turn the chicken to cook the other side. Simmer for another 10 minutes low heat.
5. After 10 minutes, add the pineapple slices and its juice. Then start basting the chicken (scoop some sauce and pour over the chicken as you cook). Cook the chicken until the sauce thickens (medium heat).
6. Once the sauce is reduced, add salt to taste. Simmer for a minute then remove from heat.
